The Korean beef bone broth at Gang Galbitang Seomyeon was rich enough to eat with just a pinch of salt instead of dadaegi (spicy seasoning paste), and it made a filling meal.

With the cooler breeze lately, I suddenly craved something warm and soupy. After work, my fiancé and I were debating what to eat for dinner, and we settled on galbitang (beef short rib soup) — so we headed to Gang Galbitang in Seomyeon.

We parked at Blue Parking Lot and walked over to Gang Galbitang Seomyeon. This is a handmade galbitang restaurant where every step is done by hand. It's already famous around Seomyeon and Bujeon Market for great gukbap (soup with rice), so we went in with high expectations. There was no wait when we arrived, but the tables were already full, so we sat at the bar counter.

Deciding what to order with my fiancé, we ordered two gang galbitang and added two jungmyeon noodle add-ons. Since the sign said the jungmyeon noodles are the same kind used in Jeju's gogi guksu (meat noodle soup), and I love that dish, I got swept up and added an extra portion for my fiancé too.

After a short wait, the galbitang arrived. As soon as it came out, my fiancé and I were both amazed at how much meat was piled in.

Extra Jeju jungmyeon noodles added to the soup

The extra jungmyeon noodles we ordered came in a huge portion too. The basic galbitang already comes with glass noodles, so adding jungmyeon on top made for a mountain of noodles. If you're on the fence about adding the jungmyeon noodles, I'd say go for it 💛 Hungry, I tried the broth first — made with beef bone stock, it had a clearly rich, deep flavor. The broth was so good that I intentionally skipped the chili paste and just seasoned it lightly with salt.

There was so much meat that it kept turning up bite after bite — surprising every time. I dipped the meat lightly in soy sauce to eat. With the galbitang packed full of meat and the rich, delicious broth, it was a genuinely filling meal, the kind I hadn't had in a while.
