Bunko Suyu is a Japanese-style izakaya built around seasonal sashimi, with the fish changing by season, and futomaki rolls generously packed with fillings. Bunko Suyu ages its sashimi according to each type of fish, and its maki come in several varieties depending on the fish, such as Kaisen Maki, Negitoro Maki, Herring Isobe Maki and Saba Bozushi with gamtae seaweed.
