Gongdeok oat bowl reheated the next day: Why Starve Diet salad
In short
Why Starve Diet Gongdeok Main Branch is a salad and oat bowl restaurant in the basement of the Lotte Castle Presidents building near Gongdeok Station in Mapo, Seoul. The writer packed a smoked duck oat bowl and a chicken oat bowl to go, then reheated only the meat toppings in the microwave the next morning after working out, keeping the vegetables crisp while the mustard sauce and sriracha matched each topping perfectly. Even eaten the day after takeout, this Gongdeok salad spot held up.

The place that makes my heart race whenever I'm in Gongdeok
Hi, this is Edwood. Whenever I go to Gongdeok, my heart reacts before my brain does, because I already know exactly where I want to go. It's Why Starve, the salad place that has instantly won over countless office workers and food lovers, and it's basically synonymous with freshness around here. It sits solidly in the basement arcade of the Gongdeok Lotte Castle building, so it's also very easy to reach by public transit. Honestly, I first discovered this place thanks to my wife.

Back then, I got to try it for the first time completely by chance through my precious wife, and I was totally won over by the crisp quality of the vegetables and the harmony of the generous toppings. After that strong first impression, I even went back once on my own to grab takeout, that's how deeply I fell for it. And this time, since I happened to be in the Gongdeok area anyway, this place immediately flashed through my mind, and I decided without a second thought to go again, happily. From the moment I started walking there, anticipation had my mouth watering.
Every time I come here, the store's lively energy and cleanly organized interior welcome visitors first. Even by my picky standards, you can see that hygiene management is thorough, which builds deep trust even before you take a bite.
Ordering two oat bowls — smoked duck oat and chicken oat
Why Starve Diet Gongdeok Main Branch is a magical place that's always crowded and full of energy, no matter when or in what circumstances you drop by. That kind of turnover is also proof that the ingredients are extremely fresh. Watching the steady stream of people looking for a healthy meal, I could feel with my whole body that this place holds a spot among the best hidden salad restaurants in Korea. Reading through the many menu boards on display at the showcase always sends me into a happy dilemma, because there are so many appealing options, from salads to warm bowls to oat bowls.

After a long deliberation, since I wanted something a bit more filling and nutritionally balanced this time, I finally settled on ordering two: the smoked duck oat bowl and the chicken oat bowl. Even during the ordering process, the staff always greeted me with warm smiles and attentive service, which warmed my heart during the short time I spent in the store. I happily paid, carefully packed the two sealed oat bowls with both hands, and headed home with an excited heart.

Every time I visit, I notice the same thing: even outside peak hours for office workers, the store is always bustling with takeout customers and delivery orders, which strongly confirms that I picked the right place. This was already my second time coming here in person, and every visit delivers the same unwavering satisfaction, making it a true regular spot for me.

Sauce: custom or recommended?
By the way, one of the charms of this place is that you can customize the sauce that goes on the salad. There are so many sauce varieties that you can pick exactly what suits your taste, or if you can't decide, you can ask staff to recommend a combination. Since I fully trust the expert eye of someone who can best bring out the true flavor of these dishes, I asked for a recommendation without hesitation. Even as I put the containers in the fridge back home, my mouth was watering with anticipation.
Eaten the next morning after a workout
Since it was sealed so perfectly, I planned to eat it not on the day I picked it up but the next day, after my wife and I finished a good morning workout together. After sweating it out, my body was craving something healthy yet filling. Barely containing my excitement, I carefully took out the cold salad containers I had kept in the fridge.
The fresh vegetables hadn't wilted at all and stayed just as crisp as if freshly made, which impressed me right away. And here's my own little tip for eating it well.

Keep the vegetables cold as they are, but take out the meat toppings — the smoked duck and chicken — separately onto a plate and warm them gently in the microwave.

Doing this maximizes both the warm savory flavor of the meat and the crisp, cool texture of the vegetables and oats, recreating a state just as good as eating it fresh at the store. The moment I put the reheated meat back on top, a savory, clean aroma spread through the whole house.
Mustard sauce and sriracha, matched by topping
Now it was time to add the carefully packed dressings. It seemed the owner had matched the smoked duck with a spicy-sweet mustard sauce, and paired the mild chicken with a sriracha sauce that was spicy with great umami depth.

I opened the lids and generously drizzled the dressing over each oat bowl. The moment I tasted a bite, the richness of the sauce and how well it all came together left me speechless.

I realized once again that both sauces matched their respective meat toppings so perfectly it was almost eerie. Just then, an exciting pro baseball broadcast was on the TV in the living room.

Sitting comfortably in the living room on a day off, chatting casually with my beloved wife while watching baseball together and eating a healthy meal — that was truly a huge everyday happiness.

The chewy texture of the oats kept me feeling full for a long time, and thanks to the abundant vegetables, my stomach felt completely comfortable, not weighed down at all. Once again, Why Starve delivered a flawless taste without any disappointment, a place that always clearly exceeds my expectations.
