Bolli-dong, Daegu makchang set menu with hot-pot rice: Supbul Makchang

A last meat outing before giving birth at Supbul Makchang in Bolli-dong, Daegu
Supbul Makchang is a makchang (grilled pork intestine) restaurant in Bolli-dong, Dalseo, Daegu. Things to do before giving birth!! Go eat grilled meat at a restaurant!! All the parenting veterans told me that once you have a baby, you can't eat out for a while... especially not grilled meat, since it's such a hassle — so eat as much as you can before the birth, they said, hahaha, TT. So lately I've been putting that advice into practice, haha.
This time I was craving makchang, so I looked up good makchang spots near my house, and that's how I found Supbul Makchang!

Outside: countryside grandmother's house concept and a bamboo patio

There were quite a few cars parked in front of the restaurant, so I couldn't get the full exterior shot, just a partial one — but the interior design is so pretty! It turns out this place is branded around an 80s–90s countryside grandmother's house concept. They say the restaurant is centered on three things: the freshness of ingredients from the forest and nature, the dedication of oak charcoal fire, and memories of an old hometown.


I ate inside, but the space I could see through the window was so pretty. Turns out this makchang restaurant is also famous for its outdoor patio (yajang). There's a bamboo-lined space with tables set up, and it was such a covetable spot. When there's a cool breeze blowing, how good would grilling makchang out there be... it seems like it'd feel so nice.

Maybe because it was hot and still early, only the indoor section was open, and that's where I ate. Such a shame... next time I want to try eating on the bamboo-lined patio and feel that outdoor atmosphere!!!
Of course they also have baby chairs for visitors with families!

Since I came to a makchang place, I originally planned to just eat makchang, but then I spotted the set menu and figured just makchang alone would be a shame, so I ordered the set, haha. I went with makchang (2 servings) + galmaegisal (grilled diaphragm meat, 1 serving) + pork neck (1 serving) + Cheongdo hanjae minari (water dropwort) for ₩53,000.

Supbul Makchang's most emphasized menu item is free-range, eco-friendly Iberico makchang. Iberico pigs are known to be raised free-range in an environment close to nature in Spain's Iberian mountain range, feeding on wild acorns as they grow. So the flavor and marbling are said to be different from regular pork!! I wonder how it'll actually taste~~
On the table: jangjorim and kimchi on the grill, plus four sauces

Love that the water isn't just plain water!

The basic side dishes arrived, and one of them was jangjorim (soy-braised beef)??? Turns out the jangjorim and kimchi are meant to be placed on the grill and cooked. The flavor of these two... was seriously... the kind that makes you finish a whole bowl of rice.

They also give you geotjeori (fresh seasoned cabbage) and mookbap (jelly and vegetable salad)!

There are as many as four sauces: spicy sauce, shiitake wasabi sauce, salt, and soybean powder. You can pick and choose depending on the type of meat and your taste.

They also serve beef radish soup — this is definitely a one-bottle-of-soju-before-the-meat situation, haha.



It was great that there was a self-serve vegetable corner where you could grab your own veggies!

How does the Iberico makchang taste? Crisp outside, juicy inside, no gamey smell
With the jangjorim and kimchi I mentioned earlier placed on the grill, I first grilled up the signature makchang! Doesn't it look crisp outside and juicy inside just from the photo...

There was absolutely no gamey pork smell, and it was crispy outside with juices bursting inside — so good. Maybe because it's Iberico makchang(?), it felt a bit more tender and flavorful than regular makchang...

Next up, galmaegisal! It had a savory yet chewy texture — a different charm from the makchang~
Order the hot-pot rice 25–30 minutes ahead
They have hot-pot rice here!!! Hot-pot rice, how nostalgic, haha. Since it needs cooking time, we had to order it 25–30 minutes in advance. We timed it perfectly for right when we were eating the galmaegisal and pork neck! It was so nicely fluffy, haha.

After finishing the rice and all the set menu meat, us big eaters ordered an extra serving of the makchang, which was the tastiest, hahaha.

The makchang was delicious even when eaten full... we cleaned up even the extra serving.
Is Supbul Makchang worth a visit?
The makchang was so delicious that I'd love to come back on a nice-weather day and sit on the well-decorated outdoor patio! If you're looking for a great makchang spot in Bolli-dong, Daegu, or a place with a nice outdoor patio, I recommend visiting!
