I'm the always-smiling weirdo husband here. My weirdo wife and I love gopchang, makchang, and all things pork offal. Maybe it's because we're pigs ourselves — oink oink. So I guess that means we love ourselves. Overflowing self-love....

Anyway.... whenever there's a good gopchang restaurant in Daegu, we always go find it, and this time's visit to Miso Gopchang in Wolseong-dong might just be the best gopchang we've ever had. Seriously legendary.

Miso Gopchang Wolseong is a new meat restaurant that opened in Sinwolseong. There's often a wait in the evening — enough that just hearing the word 'gopchang' makes you smile before you even sit down.

I arrived at 8:30pm. Why? Because we'd just come from a group run.

We eat more than we run, apparently.

Let me tell you about Miso Gopchang Wolseong. If it's in your neighborhood, you have to try it. Best gopchang I've ever had....

Does Miso Gopchang Wolseong have outdoor tables?

When the weather's nice, there's an outdoor tent table in Wolseong-dong — just the one table.... but honestly, better to eat indoors. Outside, the smoke really gets you.

A 40-year-old bottle of Geumbokju ginseng liquor. The very first grill plate this restaurant ever used.... tongs.... At this point it's beyond retro.... practically an intangible cultural heritage.

Floss, string, glasses tissue — every table has them. The barley tea is always so good. Maybe it's because we'd just gone running, but I downed a whole bottle.

Booking for 5 got us a perfect spot.

Order any grilled item and you get free abalone-scallop soup. Please, please order the grilled items just to get this. It's genuinely, genuinely delicious and fresh.

The owner even preps it for you herself. Oh, by the way, the owner is incredibly kind, has a great look about her, and smiles a lot. Ah, right — because it's 'Miso' (smile) Gopchang....

Side dishes arrived — how courteous. The courtesy at Miso Gopchang Wolseong, a meat restaurant in Wolseong-dong, comes in a basket.

Abalone, scallop — so incredibly fresh. It just makes you smile. When's the last time you went to church, haha.

The soy sauce is so, so good. A friend asked the owner for the recipe, and — of course — the secret stays a secret.

We ordered the Miso Platter for 3 at Miso Gopchang Wolseong. The grilling service is great too. A go-to gopchang spot in Daegu.

Makchang. Beef heart. Gopchang. Daechang. I saw in reviews people calling it 'milk-daechang' — apparently that's just what they call the Miso Daechang here.

They give you plenty of vegetables too, this meat spot in Sinwolseong.

You're supposed to eat the beef heart first — it's so tender and delicious.

Is this the best makchang spot in Wolseong-dong? Zero gamey smell, soft and tasty — try it for yourself and smile along. BoA — number one.

Why this is my number one gopchang restaurant in Daegu: the most gop (intestine fat) and the most solid I've ever had. Number one gopchang spot in Wolseong-dong.

The Miso Gopchang daechang is also delicious. Almost surprisingly so.

The potatoes cook up nicely too, and there's cheese on top. One, two, three, cheese~

They make their own green onion kimchi, so don't leave any behind. Grill it and it's an absolute vault of emotion. That's RED RED.

Time to drain the oil. Someone put a slice of bread on my face, I'm melting.

Finishing with kimchi fried rice and chive seafood kalguksu

The Miso Gopchang fried rice is a must. They swirl in egg on the side and sprinkle cheese on top. Order it even if you're already full.

The Miso Gopchang chive seafood kalguksu (noodle soup). The broth is clean, and it's packed with ingredients like clams and potatoes — I love that.

The ice cream was straight-up strawberry flavor.

Miso Gopchang Wolseong is the best gopchang I've had in my life. Everyone in our group said they wanted to come back the very next day!!!! Honestly, we felt the same — 'we want to eat this again!!!!' A genuinely great restaurant that satisfied all of us.... I'm a little scared because I know we'll be back soon.
