Korean BBQ with cold noodles in Ajung-ri, Jeonju: Ibeosi Sutbul Galbi
In short
Ibeosi Sutbul Galbi Ajung Main Branch is a charcoal-grilled marinated galbi (short rib) restaurant on the main road in Ajung-ri, Jeonju. The writer took her grandmother and aunt for the 3-person popular set — blue crab doenjang stew, Korean beef yukhoe (raw beef tartare) and corn cheese — and added steamed egg, mul naengmyeon (cold broth noodles) and bibim naengmyeon (spicy cold noodles), with a filling 250g of marinated galbi per serving. The verdict: bibim naengmyeon suits the marinated galbi better than mul naengmyeon, and the green onion kimchi is best grilled over the charcoal.

Today I'm sharing a review of the delicious pork ribs I had with my grandmother in Ajung-ri, Jeonju!
My aunt's place is in Ajung-ri, so I've been to quite a few restaurants around there. Out of all the pork rib places, this time I tried somewhere new — Ibeosi Sutbul Galbi.
Confirming this is a my-own-money, my-own-choice (paid-for-myself) visit before we get into it~
Ibeosi Sutbul Galbi Ajung Main Branch: location, parking and hours
Ibeosi Sutbul Galbi Ajung Main Branch sits right on the main road along Ajung-ro in Deokjin-gu, Jeonju, so it wasn't hard to find. There's a dedicated lot behind the building, but the parking space is a bit tight, so keep that in mind!
They're open as usual even during the Chuseok holiday, so this looks like a solid spot for a family gathering too~
- Parking: available
- Hours: Tue–Sun 11:00–23:00
- Break time: none
- Regular day off: every Monday
The interior was pretty spacious overall, and I liked that the tables had plenty of room too.
Took another shot once we sat down — overall a very clean, tidy vibe.

What's on the menu and in the 3-person popular set
Ibeosi Sutbul Galbi's signature is marinated ribs, but they also sell samgyeopsal (pork belly), kkotgarbi (flower ribs), beef and squid stir-fry, spicy braised ribs, naengmyeon, and even yukhoe bibimbap — quite a variety. We checked out the menu first after sitting down.

There were more options than I expected, so after some thought, the popular set menu — which includes crab miso stew, Korean beef yukhoe, and corn cheese — looked really good, so we decided to get the 3-person popular set plus steamed egg, water naengmyeon, and bibim naengmyeon.

They're also running a Naver receipt review event, FYI! We joined in and got a free sikhye haha.

After ordering, before the food came out, I spotted something fun — a conscience scale?? Lol, I wonder if anyone actually uses it, but it made me think this place really sticks to proper portions.
The full table: side dishes, blue crab doenjang stew and Korean beef yukhoe
Before the marinated ribs arrived, they brought out the side dishes first — and honestly, the side dishes alone looked like a full spread.

Starting with green onion strips, salad, and wrap greens, they set out seasoned raw fish salad, napa cabbage kimchi, japchae, seasoned crab, wild garlic leaves, and green onion kimchi, followed by crab miso stew and cold cucumber soup.

And then the corn cheese and Korean beef yukhoe that come with the popular set..!! It really was a full spread~

The yukhoe was seasoned with gochujang, sweetish and delicious — it made me think of soju.

The crab miso stew was a bit spicy-sharp too, with crab in it for a refreshing, clean broth that made the rice go down easily. Best of all, it stayed on the induction burner so it stayed hot until the end.

The tangy raw fish salad and sweet seasoned crab weren't fishy at all and tasted great — perfect side dishes to whet the appetite before the main event of meat.
And here's the soft, fluffy steamed egg we ordered separately! You already know how good steamed egg is, right?

How much meat do 3 servings of marinated galbi actually give you?
Then the main dish, the ribs, came out — the amount in the photo is the marinated ribs for 3 people. I thought the set menu portion might be small, but it turned out to be plenty, no conscience scale needed. Makes sense, since it's 250g per serving!

After the ribs, the tempting water naengmyeon and bibim naengmyeon arrived too — the water naengmyeon with its floating ice slush looked cool and delicious, but the sauce on the bibim naengmyeon looked especially special.

And just like that, this whole generous spread was laid out.. haha
Grilling the marinated galbi over charcoal with the house sauce
They started grilling the meat for us properly — marinated ribs are tricky to grill just right because of the marinade, but each table had a valve to control the flame strength, which made grilling a lot easier.

Beautifully cooked marinated ribs, done just right.

I tried the ribs plain first — sweet, salty marinade fully infused with charcoal aroma, pretty much a textbook marinated rib. But personally, dipping it in Ibeosi Sutbul Galbi's own special sauce was really the best.

Green onion strips + garlic + chili wrap — perfect too.
Bibim naengmyeon or mul naengmyeon with marinated galbi?
The Hamheung-style water naengmyeon was slightly bland at first, but a drizzle of mustard and vinegar brought the seasoning right on point. Topping it with a piece of meat made it even better!

My aunt had ordered the bibim naengmyeon and shared a bit with me so I could try it too.
For marinated ribs, bibim naengmyeon is definitely the answer over water naengmyeon. That sweet-and-tangy combo is insane...
Tip: grill the green onion kimchi and marinated crab on the charcoal
You all know green onion kimchi with marinated ribs is a wild combo, right? But here's an extra tip — try grilling the green onion kimchi on the charcoal a bit. It's seriously heavenly.

The seasoned crab is also great grilled — the charcoal aroma brings out the sweetness of the crab meat, a real special treat. With all these clever tricks, we enjoyed every last bite.

And we finished the meal off with the sikhye we got from the review event as a palate cleanser haha.

Right in front of the counter there's even a coffee machine, so you can get an after-meal coffee too.
Final verdict on Ibeosi Sutbul Galbi
Ibeosi Sutbul Galbi was fun to enjoy, centered around the charcoal marinated ribs with naengmyeon and various side dishes alongside. The set menu had a great composition, the taste and portions were both good, and the staff were kind too, which I really liked. If you're in Ajung-ri, Jeonju, looking for a place for a family meal out or a get-together with friends, I recommend Ibeosi Sutbul Galbi!
