A bowl of tonkotsu ramen at Ryusenso Beomeo Branch

Today's post is about my visit to Ryusenso Beomeo Branch, a ramen restaurant near the Suseong District Office in Beomeo-dong, Suseong, Daegu.

The moment I arrived at Ryusenso Beomeo Branch, the clean exterior gave off a real 'we only do ramen and we do it well' kind of professional vibe.

It's a ramen restaurant that specializes mainly in tonkotsu ramen.

Inside, the seating is arranged spaciously in wood tones. There are plenty of 4-person tables too,

For sides they also have karaage, gyoza dumplings, kaki fry, and more, so pairing them would be great haha. Side note — I had kaki fry (fried oysters) at a different Ryusenso branch once and it was so good I nearly cried tears of joy... It's summer right now so I'll hold off a bit, but once it gets a little chillier I'll give the fried oysters another try.

Good to know before ordering

There's a notice posted above the kiosk!

  • If the flavor is too strong, ask for extra broth
  • Add pepper and 1–2 spoons of minced garlic to taste
  • Noodle refills are only possible if there's soup left

Every table is stocked with pepper, pickled ginger, pickled radish, and garlic.

Eating it alongside the ramen adds a nice tangy freshness haha.

And personally, adding this minced garlic to the basic Ryusenso ramen definitely brings the broth's flavor to life.

Basic Ryusenso ramen, Kara level 2, and shrimp tempura

Not long after ordering, the ramen arrived!! I ordered the basic Ryusenso ramen, the Ryusenso Kara ramen, and shrimp tempura. The Ryusenso Kara ramen is the spicy option, and since you can adjust the spice level, I bravely upgraded from the basic level 1 to level 2.

First, the basic Ryusenso ramen — the deep, rich pork bone broth is no joke. It's topped with chashu, wood ear mushroom, scallions, and ajitama (seasoned soft-boiled egg).

The crunchy texture of the wood ear mushroom combined with the soft, chewy ramen noodles gives a really fun mouthfeel haha. The chashu is also big and pairs great with the noodles, and the ajitama had such a soft yolk that I regretted not ordering an extra one... Next time I'll add two extra.

How spicy is Kara ramen level 2?

As for the Ryusenso Kara ramen — maybe I was a little too brave, but level 2 was quite spicy. I remembered the owner mentioning to ask for extra broth if the flavor got too strong, so I asked for more and ended up with a warm, delicious Kara ramen!!!

The noodle portion was pretty generous, and the Kara ramen actually tasted even better with the ajitama, which made me really happy T_T.

And the shrimp tempura we ordered together was packed with plump shrimp, super satisfying, with crispy batter. Eaten with the tartar sauce drizzled on top, it went perfectly with the ramen without feeling greasy!!

Would I go back? Final thoughts

It felt like it had only been a moment since the ramen arrived, but we'd already emptied our bowls completely — it was that good. I wish a ramen place like this existed right in front of my house... I'd want to come here often even just for solo meals.
