Dry- & wet-aged Korean BBQ in Cheonho: kimchi stew set, Gim Sukseong
In short
Gim Sukseong Seongnae Branch (김숙성 성내점) is an aged-meat Korean BBQ restaurant near Cheonho Station in Cheonho, Gangdong, Seoul, where staff grill pork aged by alternating dry aging and wet aging. On an early evening, two of us shared the 54,000-won Gim Sukseong Special 2 (pork neck, pork belly and gabrisal, a pork shoulder cap cut, with kimchi stew) and a 9,000-won seasoned crab rice. The thick, juicy pork neck and gabrisal and the wide range of side dishes make Gim Sukseong Seongnae Branch an easy Cheonho pick for aged pork and a glass of soju.

I'm posting right away about a place I visited early this evening. Gim Sukseong Seongnae Branch was running an event: soju or beer ordered in the restaurant between 11:00 and 18:00 is ₩2,000 a bottle.
What is the atmosphere like inside Gim Sukseong Seongnae Branch?
Inside there are round tables, and off to one side sits a refrigerated showcase just for the aged meat.

We could see the really appetizing cuts of meat with our own eyes inside the showcase fridge.

What comes in the Gim Sukseong Special 2 and how much is it?
Gim Sukseong Special 2 is ₩54,000 and comes with 2 servings of thick 2cm pork neck plus a 250g limited-edition aged meat collaboration, along with kimchi stew. For a side we also ordered the seasoned crab rice (양념게장밥) for ₩9,000.
Like the interior, the menu is finished with green tape, which I found striking. At this Cheonho Korean BBQ restaurant, Gim Sukseong, there are good-value special set menus, à la carte meats, and a fairly wide range of side dishes. All the meat at Gim Sukseong is said to be aged by alternating dry aging and wet aging.
Which side dishes come with the Korean BBQ at Gim Sukseong?
- Seasoned crab (yangnyeom gejang)
- Scallion kimchi
- Myeongi namul (pickled wild garlic-like greens)
- Lettuce wraps
- Minari (water dropwort)
- Mushrooms
- Potatoes
- Napa cabbage kimchi
- Cheese salt
- Makjang (seasoned soybean paste)
- Shiitake wasabi
Special 2 cuts: pork neck, pork belly and gabrisal

The meat in Gim Sukseong Special 2 was pork neck, pork belly and gabrisal (the cut from the pork shoulder-loin junction), and the quality honestly looked great. It was plenty to leave the two of us satisfied.
Soon a staff member came over and started grilling the vegetables and meat right away. Oh, and there was myeoljeot (salted anchovy sauce) on the grill too.

A guide to eating Gim Sukseong the tasty way was posted on the wall.

How does the kimchi stew in the Special 2 taste?
The kimchi stew (kimchi jjigae) included in Special 2 was great for spooning up the broth between sips of soju. It had meat and kimchi in it, so fishing those out was a lot of fun too.

How well do the staff grill the thick aged cuts?
At Gim Sukseong Seongnae Branch, once the meat was cooked through, a staff member cut it into bite-size pieces for us. Thick meat changes texture depending on how you grill it, so grilling it yourself takes a lot of care, but the staff kept watching the meat on the grill and cooked it just right.
I dipped a nicely grilled piece of gabrisal lightly in salt, and it was a charming cut with a soft texture and moist juiciness.

The two of us happily shared a bottle of soju.

When the meat was about halfway done, the staff also put minari and kimchi on the grill to cook alongside it.
Salt or myeoljeot (anchovy sauce) with the 2cm pork neck?
The Gim Sukseong pork neck was really thick yet tender, with a pleasant bounce. Salt brought out the pork neck's own clean, nutty flavor, while myeoljeot added a salty, deep savoriness.

Now and then we also ate the mushrooms and potatoes grilled in the meat fat, and they went together so well.

Pork belly with lettuce wraps and kimchi
The Gim Sukseong pork belly was also thicker and juicier than meat at other places. Wrapped in lettuce, it went nicely with the vegetable juices, and the meat's nuttiness blended well with the spicy-sour kimchi.

Dipping just the meat in myeoljeot, eating it with minari, eating it with myeongi namul, pairing it with the many side dishes on offer, you get a different charm each time, all in one meal.
What is the 9,000-won seasoned crab rice side like?

The Gim Sukseong seasoned crab rice came with shredded scallion, seaweed flakes, an egg yolk, pickled radish, crab meat, and rice underneath. I mixed it up with a few quick stirs and dug in right away.
The finely chopped pickled radish was crunchy with every bite, and the distinctive flavor of seasoned crab came through, adding a spicy-sweet taste that was easy to eat. And putting a piece of pork neck on top made the crab rice even tastier.
Gim Sukseong Seongnae Branch, a Korean BBQ restaurant in Cheonho, was a really great place to eat comfortably with aged meat and enjoy a glass of soju.
