On a Friday evening, I went to Baegyeom Makchang Euljiro Main Branch in Euljiro 3-ga with my best friend. We had Daegu makchang, where pre-grilled whole tripe is finished over charcoal, plus seasoned makchang and jjabaegi with ice. 🔥 Here's the whole story, let's go!!
Baegyeom Makchang Euljiro Main Branch at a Glance

What did we order at Baegyeom Makchang Euljiro Main Branch?
We started with 2 servings of Daegu makchang, 1 glass of jjabaegi and 1 beer, then added 1 serving of seasoned makchang and another beer. We came to this spot near Euljiro 3-ga Station for makchang and a drink.

First we ordered 2 servings of Daegu makchang, 1 glass of jjabaegi and 1 beer. It felt a little short, so we added 1 serving of seasoned makchang and 1 more beer.

The first order has to be 2 servings of the same menu item, but add-on orders can be 1 serving. You don't want to break the flow while eating, but sadly ours got interrupted and we had to start again... On Friday evenings and weekends it's busy, so definitely place your add-on order in advance~ haha
Side dishes at Baegyeom Makchang
The side dishes are set out as soon as you order..

- A small bottle of water, which is honestly better than water from a purifier~
- Pa-kimchi (scallion kimchi)
- Scallions and chili peppers to mix into the dipping sauce
- Daegu makchang sauce
- Garlic and ssamjang (dipping paste)

- Salt
- Perilla leaves

It all comes out nice and simple like this~
How do you grill the Daegu makchang at Baegyeom Makchang?
The Daegu makchang comes as pre-grilled whole tripe, and you finish grilling it yourself over the charcoal at your table. Grill the whole piece until golden, then cut it to about 6mm thick and cook the cut sides too.
It comes out plump like this~ and you grill it yourself at the table.

How to enjoy Daegu makchang
- Put the pre-grilled whole makchang on the charcoal
- When the surface turns golden, cut it to about 6mm thick
- Cook the cut sides evenly too
- Dip it in the sauce!
Grilling meat is hard enough, and with offal like this it's even more unclear when it's ready to eat, right?

The restaurant's grilling instructions are worth following.
What goes into the Daegu makchang dipping sauce?
You dip the Daegu makchang in a sauce mixed with scallions and chili peppers to your taste. The accompanying sauce is what makes Daegu makchang distinctive.
Mix scallions and chili peppers into the sauce to your liking, then dip the golden grilled makchang in it. You can control how much scallion and chili goes in, but... well... just throw it all in~

The makchang was good on its own, but dipped in the sauce it tastes different again, so you never get tired of it and keep on eating~!

You'd think it'd be tough, but it was tender and pleasantly chewy, so no jaw fatigue at all.
Can you add 1 serving of seasoned makchang at Baegyeom Makchang?
Only the first order needs 2 or more servings and add-ons can be 1 serving, so we ordered 1 extra serving of seasoned makchang. It comes fully cooked, so you eat it right away without grilling.

Daegu makchang has to be grilled over charcoal, but the seasoned makchang comes fully cooked, so they told us to just eat it as is!

Shredded raw onion comes with it too, so you can eat it alongside the seasoned makchang~ The seasoning is slightly spicy and sweet.
How much is jjabaegi at Baegyeom Makchang, and what is it?
Jjabaegi is soju served by the glass with ice, and it costs ₩2,500 per glass. This time we ordered jjabaegi along with beer.

It's a good order when you don't want a whole bottle and just want to dip your tongue in. Grilling makchang with a best friend on a Friday evening and having a drink was a great combo. If you're planning a relaxed dinner and drinks in Euljiro, I recommend Baegyeom Makchang for Daegu makchang with a glass of jjabaegi!
