There are certain dishes that, once you've had them, keep popping into your head for no reason! Kalguksu is something you can get almost anywhere, but Jinhae Jang's versions have their own distinctive character, so the taste stuck with me. I kept thinking, that bone kalguksu was so good... and while chatting with my husband about dinner, we both agreed on Jinhae Jang Bone Kalguksu haha 🥹

A rainy evening, walking straight in with no wait

We went at 8:30pm, avoiding the peak dinner rush, so we were seated at Jinhae Jang Bone Kalguksu, Yangsan Branch right away with no wait. It happened to be raining too, so I thought, good thing we came for a hot soup dish. Meanwhile, delivery orders just kept coming in nonstop!

It was already past dinner time at 8:30, but I was surprised at how many delivery orders were coming through! I guess a good restaurant doesn't care what time it is. And since it was raining, it seemed like everyone else was craving hot kalguksu just like us. We've always eaten in-store, so next time I should try ordering delivery too :)

I decided on the best-of-the-best menu item, bone kalguksu, before we even arrived! I'm always set on bone kalguksu, no question. My husband, on the other hand, tries a new menu item every time we come to Jinhae Jang Bone Kalguksu — and this time again, he ordered the brand-new pork gomtang kalguksu. Every new menu item he's tried so far has been satisfying, so he seemed curious about this latest kalguksu addition too.

How was the spicy pork gomtang kalguksu as hangover food?

The spicy kalguksu has a special red seasoning mixed in, so the broth is quite a bit spicier than it looks❣️ After taking a sip of the spicy pork gomtang kalguksu broth and a bite of the thick noodles, my husband said it felt like everything he wanted was in one bowl! He'd gone to a friend's drinking get-together the night before, so he said it left him feeling refreshed and settled his stomach nicely 😆👍🏻

The broth is so rich that it soaks into the noodles beautifully — you could eat just the noodles alone and the seasoning would still be spot on. The warm, savory broth you'd expect from kalguksu stays true to the basics, but the generous amount of hearty pork gives it an extra layer of depth and richness that feels special!

They simmer the bones down thoroughly, so the broth has more depth than regular kalguksu, and there's plenty of meat to pick off the bone too, making it a nutritious dish. The portion of meat is so generous that it's basically half noodles, half meat — a fully satisfying bowl with nothing to complain about.

What about the noodles? Thick and slow to go soft

I heard this place was featured on a TV segment about noodle dishes called 'A New World of Noodles' — and no wonder, it deserves it 😍 Once you try it yourself, you'll see that Jinhae Jang Bone Kalguksu isn't just about great meat and broth — the noodles are special too. They're noticeably thicker than at other places, so the chewiness when you bite down is next level. Every chopstick-full fills your mouth with the springy texture of thick noodles — the bounce is amazing! Because the texture is so firm and chewy, the noodles don't turn soft and mushy throughout the meal, which I loved ✨

The savory flavor of the broth soaks all the way through them — genuinely delicious. A restaurant that gives you more satisfaction than a regular bowl of kalguksu! The reason it kept crossing my mind even after eating... it's exactly this flavor.

Kimchi, the classic sidekick to kalguksu, is also this place's little kick! Despite how it looks, the kimchi is spicier than you'd expect. Just a small bite and your mouth goes numb pretty fast, so it's best enjoyed together with the noodles or meat 🔥

I wondered just how spicy it could be for them to actually write 'spicy kimchi' as a warning... 😗 The broth is as rich as a bone gomtang, so it really pairs well with the spicy kimchi haha. There's also crunchy kkakdugi alongside the kimchi, so you can alternate between the two as you finish your bowl. Switching between the spicy-sweet-tangy kkakdugi and kimchi between bites of noodles and meat kept our appetites going the whole time, so we cleaned our bowls happily, no getting tired of it, hehe ❤️
