Korean restaurant in Gwacheon for Hongeung-style bibimbap: Bibisam

I went to Bibisam Gwacheon Main Branch (비비삼 과천본점) for lunch in Gwacheon. I had bibimbap prepared in the Hongeung torim style with tteokgalbi (Korean grilled patties); because the rice came pre-seasoned, it was easy to mix lightly.

Is it good for a solo lunch, and how was the wait?

I had heard that waits could be long, so I arrived before opening. On the day I visited, customers gathered at 11 a.m.; about 10 minutes after the doors opened, it was nearly full and a wait continued.

The interior was clean and comfortable. There were tables for two and four, with everyone from solo diners to groups of two or four. It is a place where you can eat alone, but it was busy from just after opening on my visit.

Where can you park if you drive?

The restaurant is at 101, 1F, 10-13 Saesulmak-gil, Gwacheon-si, Gyeonggi-do, South Korea. Paid public parking is available nearby; I parked at Gwacheon Citizens Hall before visiting.

How do you eat Hongeung torim bibimbap?

At Bibisam, bibimbap is prepared in the Hongeung torim style. Hongeung bibimbap is said to have begun in Hwangdeung, Iksan, Jeollabuk-do, where stoneworkers mixed vegetables, meat, and rice together for a quick, filling meal.

Torim is a method of repeatedly pouring hot broth over rice and draining it off. After the rice is torim, it is seasoned before serving, so I only needed to mix it lightly with chopsticks.

Are food pickup and side dishes self-service?

When the alarm sounds, you collect your food yourself from the pickup counter and return used dishes to the return counter. Take as much soup and as many side dishes as you will eat from the self-service bar. The rice is seasoned after torim, so plain rice is not separately available.

I was told that pickup and returns are self-service because the restaurant operates with a small staff. I was fine with collecting and returning my dishes myself, and the staff were kind.

What kinds of bibimbap and tteokgalbi are available?

I could choose bibimbap with Korean beef yukhoe (seasoned raw beef), vegetables, octopus, or bulgogi. Sets could include Korean beef tteokgalbi or Korean pork tteokgalbi on a hot plate, and there were also stone-pot fish roe rice and stone-pot octopus fish roe rice dishes.

Sesame oil is included as standard, and you can add the seaweed flakes at each table to taste. The bibimbap was described as low-sodium, and I was told that gochujang could be requested from staff. During my visit, there was a notice that namdo cockles could be added for ₩500 with a receipt review.

How were the Korean beef yukhoe bibimbap and beef tteokgalbi?

The Korean beef yukhoe bibimbap set was one of the signature dishes. I was told that no meat tenderizer is used for the yukhoe.

The yukhoe was chewy and springy rather than icy or grainy like frozen meat. Its nutty flavor and seasoning worked well with the rice, and the accompanying ingredients also felt fresh.

The Korean beef tteokgalbi on a hot plate was thick and juicy, making the bibimbap more filling. I also mixed the fried egg that came with it into the bibimbap.

How were the spicy octopus bibimbap and pork tteokgalbi?

I prefer cooked seafood to yukhoe and also like spicy food, so the octopus bibimbap suited my taste. The octopus was tender rather than tough and had a pleasant chew.

The Korean pork tteokgalbi was also tender and flavorful. Lightly mixing the torim rice and having it with the tteokgalbi made for a filling lunch.
