Moran aged pork grill with white kimchi wraps: Mat Chandeul

In short

Mat Chandeul Wang Sogeum Gui Moran Branch is an aged-meat Korean BBQ restaurant near Moran Station in Seongnam, Gyeonggi. Four diners ordered the B set (pork neck and belly, 650g) with doenjang stew, then added raw hanging tender and naengmyeon, and the staff grilled everything at the table, building each bite on grilled white kimchi with meat and pickled chili peppers on top. The thick aged pork belly in a grilled white kimchi wrap was the highlight of this repeat visit.

Private rooms at Mat Chandeul Moran Branch for group dinners

The inside has a regular grill-house feel, but there are also room-style spaces, so it looked good for groups too. It has a comfortable atmosphere for chatting while eating meat with several people, so I'd recommend it for company dinners or family gatherings!

A varied spread of basic side dishes at the grill house

Side dishes and the complimentary muksabal (chilled acorn jelly soup)

I liked that the side dishes were surprisingly varied. A lot of grill houses only give you one or two, but here there was a good variety, so it was fun mixing and matching them.

Deciding what to put on top of a piece of meat is oddly one of the happiest parts.

The refreshing basic mukbap (acorn jelly soup)

I took a spoonful of the mukbap (acorn jelly soup) that comes as a basic side before the meat arrived, and it was so refreshing and delicious...

A staff member sprinkled two kinds of salt onto each of our individual plates.

What four people ordered: the 650g B set and the extras

There were four of us, so we started with the B set — pork neck and belly, 650g — plus doenjang stew (soybean paste soup), and after finishing that, we ended up adding raw hanging tender and naengmyeon (cold noodles) too...

Raw pork neck and belly, 650g, from the B set spread

First off, the meat looked incredibly thick! Both the pork belly and the pork neck had real thickness to them, so just looking at it gave that proper meat-eating feeling.

Thick pork belly and neck neatly laid on the grill

Somehow the neat way it was laid out made it taste even better...?

And one of the best parts! At most grill houses you're busy grilling the meat yourselves, but here the staff grilled it for us, so we could talk comfortably and just focus on eating — it made everything so much easier.

Golden, staff-grilled aged pork belly

How the aged pork belly and pork neck tasted

The pork belly was golden and crisp on the outside and moist on the inside, so each bite burst with juice — it really is a Moran hotspot, the meat is thick and full of juice, so it was delicious.

Moist, grilled aged pork neck

The pork neck was soft and moist too, with no dry feeling at all. Especially since the meat itself was fresh, I liked being able to taste that deep flavor unique to aged meat.

Grilled meat stacked up like a tower

Once everything is grilled, they stack it up like a tower like this — and we were all amazed it didn't collapse at all, haha.

White kimchi grilling on the pan

The best bite: grilled white kimchi with pork and pickled chili peppers

What stuck with me most was the white kimchi! They grill the white kimchi and then build a bite with meat and pickled chili peppers on top for you, one piece at a time.

This combination was way more delicious than I expected, so I gobbled it up as soon as I got it.

A meat wrap shaped into a single bite

I also wrapped some in lettuce and perilla leaves, a must with meat — once grilled, the white kimchi turns slightly nutty and clean-tasting, and the pop of the pickled chili pepper in the middle cut right through the richness. You have to try this combo when you eat meat here!

The doenjang stew had meat in it, so the broth was richer and more savory than a typical soybean paste soup. Eating meat and then having a spoonful of the stew makes you crave a bowl of rice, haha.

Was the extra raw hanging tender worth adding?

We said we were full because the meat was so good, but we ended up adding raw hanging tender anyway.

The raw hanging tender that was added on

The raw hanging tender was much softer than I expected, and when I chewed it, it had a taste that was almost a bit like beef.

It had barely any of the chewiness that hanging tender usually has, so I personally enjoyed it quite a lot.

Finishing the meal with green-tinted naengmyeon noodles

And to finish, naengmyeon — isn't cold noodles the unwritten rule after meat, haha?

So we added naengmyeon too, and I was curious seeing the noodles were green — maybe a green tea noodle. The sauce flavor was stronger than expected, but not overly spicy, so it was delicious.

The added naengmyeon with striking green noodles

Ending with a bite of naengmyeon topped with galbisal (rib meat) was the perfect finish!
