Table setting of Gyeongju-style marinated short ribs at Daehwa Sutbul Garden Siheung Janggok Branch

Here's my review of "Daehwa Sutbul Garden," a Siheung Janggok-dong restaurant that made for a really satisfying family dinner!

Daehwa Sutbul Garden's signature dish is Gyeongju-style beef short ribs. Maybe it's because the marinade isn't overpowering and the special sauce plus the tender, chewy short rib texture is so good, but my meat-picky kid actually ate a ton 👍🏼

If you order the Gyeongju-style instant marinated beef short rib set (500g), you get kalguksu noodles, sausage, chicken gadani (cartilage) meat, and a bowl of ice cream all for free!! The three of us ate really well from meat to dessert :)

True to a Gyeongju-style short rib restaurant, the atmosphere was great with traditional Korean lanterns. Private partitions divide the seating, so it was cozy and quiet for a family meal. "Daehwa Sutbul Garden Siheung Janggok Branch" works for couple dates, family dinners, and group gatherings alike :)

Side dishes come with the table setting by default, and you can grab more from the self-serve bar if you need.

What comes in the short rib platter set?

Daehwa Sutbul Garden Siheung Janggok Branch's signature set menus are the half marinated/half salted assortment, marinated galbisal (short rib meat), and the Daehwa Special Table — all orderable in different quantities: regular, large, or small.

Since we were two adults and a five-year-old, we ordered the Gyeongju-style instant marinated beef short rib set. Ordering this set gets you handmade sausage + chicken gadani (cartilage) meat + market-style kalguksu + a bowl of ice cream, all free!!👍🏼 I feel like ordering the set is a no-brainer if you visit Daehwa Sutbul Garden~? We also added the kid's rice (soy-egg rice) as a side.

If you order the half marinated/half salted set, you get handmade sausage + chicken gadani + chicken anchangsal (skirt meat) + market-style kalguksu + a bowl of ice cream — with the anchangsal added on top :)

Basic table setting with 9-10 side dishes

Nine to ten side dishes and tortillas at the grill table

The basic table setting alone comes with 9–10 side dishes?! A well-rounded selection of banchan that pair nicely with meat 🙌 Seasoned lettuce, napa kimchi, white kimchi, young radish kimchi, various pickled sides, and even tortillas! Tortillas at a Korean BBQ place — isn't that unusual? Grilling the tortilla over the charcoal, then topping it with meat and the special sauce, was genuinely a special treat 👍🏼

They also provide beef seaweed soup as standard, and it's the real deal — packed with beef. Seaweed soup is my kid's favorite soup, and a bowl of rice with just that soup disappeared in no time haha.

Meat grilled over charcoal is never bad, right 🥹 The charcoal was at just the right heat, so the meat cooked quickly and we didn't have to wait long between rounds — very satisfying.

First look at the Gyeongju-style garlic marinated short rib platter

Then out came the Gyeongju-style short rib platter!! The visual of the Gyeongju-style ribs, tossed in marinade right at order time, is no joke 🥹 Loaded with garlic, it looked so appetizing 👍🏼

Alongside the marinated short ribs, the chicken gadani and handmade sausage rounded things out nicely 👍🏼 The short rib meat itself looked so fresh in color and texture that my mouth was watering before it even hit the grill.

We started by grilling the chicken gadani and handmade sausage first. Chicken gadani — such an unusual, rare cut, right? haha Unlike the soft texture of chicken thigh or other parts, the cartilage gave it a crunchy, springy bite that was just artful.

How to grill the tortilla just right

We also grilled the tortilla and wrapped it around the meat and sausage — wow! Such a special treat, I kept reaching for more? We finished the free tortillas and asked for more to grill haha. After grilling a few, I found that starting near the fire in the center and flipping quickly front and back without burning made it puff up and get crispier — much tastier 👍🏼

The handmade sausage's look is no joke, right? Studded with cheongyang chili inside, it wasn't greasy at all — just a bit spicy and so tasty 😋 The grilled tortilla paired so well with the wasabi and sriracha sauce too~ If you visit Daehwa Sutbul Garden, I really recommend grilling the tortilla and wrapping the meat in it! At first I thought it'd be nothing special, but I found myself grilling and wrapping it again and again without realizing haha!

Eating with a kid: the soy-sauce egg rice

Here's the kid's rice (soy-egg rice) we ordered as a side. Soy sauce, a soft-boiled egg, and seaweed flakes — a perfect combo! The generous seaweed flakes made this egg rice even better. I gave some to my kid, and my husband and I ended up enjoying it too haha.

The fully cooked chicken gadani was great dipped in the sauce, or paired with white kimchi and wasabi. That signature crunchy, springy cartilage bite was savory and delicious. My kid loves cartilage too and ate it well~!

After the sausage and chicken gadani, we put the marinated short rib meat right on the grill. The sizzling sound and aroma over the charcoal was artful! The chewy, tender short rib texture combined with the garlic aroma and special sauce was genuinely delicious haha. My five-year-old, who doesn't usually eat meat well, kept picking up the marinated galbisal — maybe because of the marinade :) When my kid eats well, I'm already satisfied 🥹

There were so many varieties of side dishes and sauces that just eating a few bites with seasoned lettuce, white kimchi, the tortilla with special sauce (I think there's cilantro in it! Suited my taste really well haha), pickled chili, wasabi, and so on, we finished everything in no time! haha

The meat was so good, beer was a must 🍻

Bowl of ice cream topped with cereal, red beans, and bean powder

Finishing with market-style kalguksu and big-bowl ice cream

Once we'd eaten our fill of meat, we asked for the market-style kalguksu. Ordering through the tabletop kiosk made it easy. The look is completely that of market-style kalguksu, right?! There wasn't a ton of stuff in it, but the rich broth and chewy noodles were genuinely delicious haha. The potato, zucchini, and chive combo tasted just like the noodles you'd get at a market, so we slurped it down fast.

After the kid finished the kalguksu too, we asked for the ice cream she'd been looking forward to most haha. It was a big bowl of vanilla ice cream loaded with cereal, red beans, and bean powder. After eating our fill of meat, cooling off with this was truly perfect haha. No need to go to a café after dinner!

Even dessert at the end was perfect at Daehwa Sutbul Garden. The whole family ate well and plenty, so I think we'll be back 💓
