Walking into Cheongun Bossam Dangsan Branch, the interior was bigger than I expected, so it seemed like a good spot for groups too. The tables had decent spacing, making it comfortable to chat while eating, and besides the indoor area, there was also an outdoor patio space for dining.

How is the medium bossam set when you swap in gaburisal?

We ordered the medium five-layer bossam set! Instead of the regular five-layer pork belly, we swapped it for gaburisal (pork jowl meat) this time. The texture varies a bit depending on the cut when eating bossam, and gaburisal was tender yet had a pleasant chewiness, which worked really well for bossam.

The basic side dishes came out neatly arranged and paired well with the bossam. The crunchy radish kimchi and the accompanying sides balanced the clean flavor of the meat nicely, and they also worked well piled onto the wrap leaves with everything else.

The meat came sliced into easy-to-eat pieces, so it was simple to wrap right away, and the accompaniments served alongside the bossam suited it well too. Piling the warm meat with kimchi and sides onto the wrap really confirmed that this combination is the best way to eat bossam.

Tray mak guksu as the set's side dish

For the set's side dish, we ordered tray makgeolli noodles! When eating bossam, ordering makgeolli noodles on the side really works — the clean flavor of the meat pairs so well with the tangy noodle sauce that I kept reaching for more. Whether eaten alongside a piece of meat or tucked into the wrap itself, it worked great.

Especially while eating bossam, you need something in between to cleanly reset your palate, and the tray makgeolli noodles did exactly that. With the medium five-layer bossam set swapped for gaburisal plus the tray noodles, it was a pretty filling spread for two. If a bigger group visits, ordering bossam in different sizes and adding noodles or other sides to share would work well too.

Bossam that was delicious whether eaten with radish, wrapped in a leaf, or paired with the noodles! The meat was tender and had a clean flavor with no gamey smell, so it worked well no matter how we combined it.
