Evening jokbal and spicy jaengban makguksu set in Sindorim: Sambaekga

I was craving jokbal (pig's trotters) in Sindorim, so I looked around and ended up at Sindorim Sambaekga.


Where is Sindorim Sambaekga, and is there parking?
Sindorim Sambaekga is near Sindorim Station, so it's pretty accessible, and it sells kalguksu (Korean knife-cut noodles) alongside jokbal and bossam (boiled pork wraps), so there's quite a range of menu options. I'd also recommend it as a Sindorim spot for drinks.

Are the lunch and dinner menus different?
Sindorim Sambaekga runs mostly meal-focused menus at lunch, and switches to meat-centered dishes like jokbal and bossam in the evening, so the mood and menu both change depending on the time of day.
If you want kalguksu and bossam together, there's a kalguksu bossam set too, letting you have both in one order — it seemed like a solid, filling lunch.
This time I visited in the evening and had jokbal, but next time I'd like to come at lunch and try the kalguksu menu too. It seems like a place to properly enjoy jokbal or bossam at dinner, and have a lighter meal with kalguksu or a set menu at lunch.

Inside Sindorim Sambaekga
The interior of Sindorim Sambaekga was clean and well organized overall. The tables had decent spacing, which made for a comfortable meal, and the space itself felt bright and pleasant.


🥢 The banchan that arrive first
While waiting for the jokbal, the basic side dishes came out first — lettuce for wraps, radish kimchi, white kimchi, and seasoned chives, among others.
I heard that at lunch Sambaekga also serves a handmade persimmon geotjeori (fresh seasoned salad) made with ripe persimmons the same day, which I'm curious about — I'll have to try it on my next visit.

The Sambaek Jokbal + Makguksu Set
In the evening you can order jokbal, bossam and the like, and after some back and forth I ordered the Sambaek Jokbal + Makguksu Set.

The jokbal had a good balance of lean meat and skin, giving it a chewy yet tender texture.
The jokbal is fairly plain-tasting on its own, but wrapping a piece in lettuce along with the seasoned chives and radish kimchi made it so much better.
The usual gamey smell you sometimes get with jokbal wasn't strong here — it tasted clean and really good!

Spicy, tangy jaengban makguksu (chilled buckwheat noodles)
And the thing I liked more than expected was the jaengban makguksu (chilled buckwheat noodles on a platter). The sauce is sweet and tangy with a spicy kick added on top, which really wakes up your appetite!
A bite of jokbal, then a bite of makguksu — the spicy, tangy sauce cut through the richness of the jokbal so well I kept going back and forth between the two. I personally prefer makguksu with a bit of spice rather than just sweetness, and Sambaekga's makguksu worked really well with the jokbal on that front.

The garlic sauce served alongside the jokbal
The garlic sauce served with the jokbal was genuinely delicious. The pungent bite of garlic balanced well with a sweet-salty sauce, and dipping the jokbal in it was so good.
🍽️ Why makguksu is a must with jokbal
If I'd only ordered the jokbal, it might have felt a bit lacking, but having the makguksu alongside made the whole meal much more satisfying. Pairing the chewy jokbal with the spicy-tangy makguksu kept it from feeling too rich, and the combo worked better than I expected.
