Hi! Today I want to introduce Supbul Makchang, a Bolli-dong, Daegu spot I go back to whenever I'm craving makchang. This isn't a one-and-done place — it's somewhere I keep returning to whenever the craving hits, and this time too it had been a while so I went for makchang again. Besides makchang, they have plenty of other options like pork neck and fire makchang, so it's a good pick even with a group since everyone can order to their taste! So here goes my review of another delicious meal at Supbul Makchang in Bolli-dong, Daegu 🤍


Weekday evening mood and retro interior at Supbul Makchang
Even on a weekday evening, the place was packed with people! My friend who came with me said she'd been here before for a company dinner, and I could see why — it's great for meals with friends, but also a popular spot for work dinners and gatherings in Bolli-dong, Daegu. Parking is easy right in front, and there's plenty of space nearby around Galbidungji, so you don't need to worry about parking here!

The retro interior stood out too! There were old-school knick-knacks scattered around that were fun to look at, and they even had a baby chair on hand. So it's a good spot for friends or couples, but also works well for a family meal with kids.


Ordering Iberico makchang for two plus one fire makchang
We ordered Iberico makchang for two plus one serving of fire makchang! I wanted to try both, so I got one of each — apparently the fire makchang comes pre-grilled! I figured that'd be nice since we could eat it right away while the makchang was still cooking haha. I waited eagerly, wondering how the Iberico makchang and fire makchang would taste 🤤



Side dishes and the complimentary beef and radish soup
The side dishes overall came out clean and well put-together! There was a good variety that paired nicely with the makchang, and I especially liked having several kinds of dipping sauces. Being able to pick and choose to my taste made eating the makchang even more fun.


The free beef radish soup was genuinely delicious! The broth was piping hot and so tasty that I kept spooning it up even before the makchang arrived haha. Taking a warm sip in between bites of makchang cut through the richness, and I found myself reaching for it again and again 🤤

The makjang (spicy dipping sauce) for the makchang was made really well too! They mixed in chopped cheongyang chili, which paired perfectly with the makchang haha. Savory makchang with salty-spicy makjang — that combo is really the best.


Self-serve corner and the Del Monte water bottles
If any side dish ran low, we could just grab more from the self-serve corner, which was nice! Being able to help ourselves to extra sides, garlic, or peppers without hesitating made the meal feel more satisfying. And on top of that, the staff were genuinely kind, so I enjoyed the whole meal in a good mood.

The water bottle turned out to be an actual Del Monte bottle haha. You don't see bottles like that much these days, so running into one here felt oddly nostalgic and cute. Even a small detail like this nailed the retro mood, which made Supbul Makchang's own Bolli-dong, Daegu atmosphere come through even more.

Grilling jangjorim right beside the makchang
I tried grilling the makchang myself haha, but I'm honestly not great at this kind of thing, so my friend ended up grilling most of it. I really want to get good at it someday... 😭
Another surprising thing about Supbul Makchang was that they served jangjorim (soy-braised beef) right alongside the makchang! You put the jangjorim on the grill too and cook it together, and it turns out to be a real hidden gem haha.

I dipped a nicely browned piece of makchang deep into the makjang and took a bite — the outside was grilled golden on the plate, giving a slightly crisp yet chewy texture, while the inside was plump and springy with a proper chewiness! The distinct savory flavor of makchang spread through my mouth, and with the subtle smoky char from the grill added in, it tasted richer and more savory with every chew. Ah, looking at these photos makes me want to go eat it again...

How does the pre-grilled fire makchang taste?

While I was busy eating makchang, the fire makchang I'd been waiting for came out pre-grilled! They explained that since it was already pre-grilled, we could just eat it right away! Taking a bite, it was moderately spicy with well-seasoned sauce, tasty enough that I kept reaching for more than I expected. It wasn't just spicy for spice's sake — there was a savory depth behind the heat that paired well with the makchang, and grilling it a bit more on the plate browned the sauce nicely and added a smoky char that made it even better.

Finishing with shepherd's purse doenjang stew
After thoroughly finishing off the makchang, they brought out nagi (shepherd's purse) doenjang stew (soybean paste stew) as the final course! Eating the hot stew with rice filled us up properly and felt like a solid finish to the meal. Even after eating makchang until full, it seems like it's an unwritten rule that rice always finds room after meat. I wrapped things up cleanly, spooning rice into the doenjang stew with its subtle nagi aroma.
I ate until I was completely full, but the bill came out lower than expected, which made the value at Supbul Makchang, my go-to Bolli-dong, Daegu restaurant, all the more satisfying haha. I guess it's because I go there so often, but once again I left having eaten really well.
