Changwon Korean restaurant with suyuk baekban: Myeongin Dwaeji Gukbap

Where is Myeongin Dwaeji Gukbap, and what is parking like?
I visited Myeongin Dwaeji Gukbap (명인돼지국밥) on Cheonju-ro in Buk-myeon, Changwon. Whenever I passed by, the parking lot always seemed full of cars. Even when I visited close to 2 PM, there were diners inside, and more groups kept coming in while I ate.

The parking area in front of the restaurant was spacious. The hours listed in the original post are daily from 9:10 AM to 8:50 PM.
Inside, the tables, benches, and partitions were finished in similar natural wood tones, giving the space a comfortable feel. The tall partitions between tables meant I was not directly facing diners at the next table. Some seats were on raised flooring, which made the space feel divided even within the same dining room. Self-service aprons and an indoor restroom were also available.
Can you get extra side dishes and somyeon at the self-service bar?
There was a self-service bar where I could get extra side dishes. When I visited, it was kept clean, and the vegetables looked fresh.



When you order gukbap (rice soup), somyeon (thin wheat noodles) comes with the basic side dishes. There was also somyeon at the self-service bar, so I could bring more.


Of the side dishes, I especially liked the gangdoenjang (thick soybean paste). I had it with the boiled pork and kept reaching for it when eating lettuce and rice together.


What are the suyuk baekban price and basic table setting?
At the time of my visit, pork gukbap and sundae gukbap were ₩10,000 each, suyuk baekban was ₩13,000, and dumplings were ₩6,000. I ordered two suyuk baekban sets.


Each table was neatly set with cups, soju glasses, salt, pepper, and tissues.


After I ordered, the basic table setting arrived. The familiar side dishes for gukbap were neatly arranged, and they suited my taste.

They gave us plenty of lettuce, and the pickled onions were topped with minced garlic. The napa cabbage kimchi and kkakdugi were tasty too. I could add dadegi (spicy seasoning paste), ssamjang, and salted shrimp to taste.

The suyuk baekban came with boiled pork and gukbap. With two servings set out, it felt generous. They also told us to be careful because the boiled pork was hot.

How were the boiled pork and gukbap?
The boiled pork was sliced thin and wide. With a good balance of lean meat and fat, it was moist and tender, and I did not notice any gamy smell. The sesame seeds sprinkled over it added a nutty flavor.
The gukbap had a milky broth with shredded scallions, and it contained thick, large pieces of meat. I added dadegi and seasoned chives. The lightly spicy dadegi gave the clean broth a bit of heat.


When I added somyeon as I ate, the noodles softened and absorbed the broth. Eating it with chives added texture, while onion and ssamjang brought a sweet, clean flavor.

The boiled pork was good on its own, but the wrap of lettuce, garlic, and gangdoenjang was particularly memorable. The crisp vegetables went well with the tender pork. Adding pickled onions helped cut through the richness with a tangy flavor.
I also liked it with dried shredded radish. Thinly sliced almonds were sprinkled on it, which made the side dishes feel thoughtfully prepared. I had the gangdoenjang with rice several times as well.
What was the iced coffee like after the meal?
I noticed a waiting-ticket dispenser at the counter. Near the entrance, there was a hand-washing area and iced coffee.



After finishing my meal, I had some iced coffee too.


It was sweet iced coffee with tiny ice crystals that melted softly. Having it after the meal made my mouth feel refreshed.

With boiled pork and gukbap together, plus somyeon and a range of side dishes, it was a satisfying meal. I liked the combination of tender boiled pork and gangdoenjang enough that I would like to return.
