Seoul Botanic Park gopchang restaurant, cut-by-cut tasting: Hwang Gop

In short

Hwang Gop Magoknaru Branch is a hanwoo beef intestine grill house near Magoknaru Station and Seoul Botanic Park in Gangseo, Seoul. The signature Hwang Gop mixed platter made it easy to compare the three cuts side by side: gopchang (small intestine) is crisp and nutty, daechang (large intestine) is soft and rich, and makchang (the final stomach chamber) is all chew, with cheese fried rice to finish. The best part of Hwang Gop Magoknaru Branch is that the staff grill everything at your table, so nobody has to watch the fire.

I was trying to decide on dinner near Magoknaru and suddenly wanted gopchang (grilled beef intestines), so I headed to Hwang Gop Magoknaru Branch. It's close to Magoknaru Station and Seoul Botanic Park, making it an easy stop for dinner after work or a date. When I'm looking for good gopchang in Magok, I usually care about accessibility, parking, and the condition of the intestines — and Hwang Gop delivered well on all three.

What comes on the signature Hwang Gop mixed platter

We ordered the restaurant's signature dish, the Hwang Gop mixed platter. When it arrived, the first thing that caught my eye was how packed the plate was. Gopchang and daechang (large intestine) pieces were browning nicely, generous chunks of meat and chives sat on top, and a side of enoki and other mushrooms rounded it out. If you want to properly try grilled gopchang near Magoknaru Station, a mixed platter that lets you taste several parts at once is the way to go.

What made Hwang Gop especially convenient was that a staff member grills everything for you. Gopchang's texture can swing wildly depending on how it's cooked — get the timing wrong and it turns chewy or overdone — but here it was cooked to just the right point without me having to think about it.

When you're dining with a group, it's also great that no single person has to be stuck tending the grill the whole time. And the muksabal (acorn jelly noodle salad) and taste of domestic yukhoe (beef tartare) served before the meal were both really tasty!

The signature mixed platter was fun to eat because it's not just gopchang and daechang — chives and mushrooms cook alongside them too. A generous pile of chives sat in the middle, and lightly cooked in the intestine fat, they picked up an extra nutty flavor. The mushrooms were easy to eat in between bites and cut through the richness a little. If you're after gopchang in Magok and want variety rather than just one cut, this platter fits the bill.

Gopchang, daechang, makchang: how the three cuts taste different

The gopchang had a crisp, browned exterior with a nutty inside. The daechang was soft and rich in flavor, while the makchang (beef bung/rectum) had a satisfying chew — the difference between the three cuts was clear. Something I personally pay close attention to when eating grilled gopchang near Magoknaru Station is any unwanted odor, and this batch had almost none, so it was easy to enjoy.

In beef gopchang, the "gop" refers to the fat lining the inside of the small intestine. When there's the right amount of gop, it grills up nutty and rich. But cook it too long over high heat and the fat can render out or the outside can burn too easily — so the grilling process really matters.

At a place where staff grill it for you, you don't have to worry about any of this — it's a lot more relaxing. I felt this cooking style is one reason Hwang Gop keeps coming up as a go-to gopchang spot in Magok.

A lot of people wonder about the difference between gopchang and daechang. Gopchang is the small intestine, known for a chewy yet nutty flavor, while daechang is the large intestine, which has more fat and tastes softer and richer.

Makchang has a stronger chew than either, giving it its own distinct appeal. If it's your first time trying grilled gopchang near Magoknaru Station, starting with the mixed platter and comparing the cuts is a good way to go.

Eating it alongside the standard side dishes made things even easier. Gopchang can start to feel heavy after a while, but a tangy or refreshing side dish in between brings you right back to it. Pairing it with the chives or mushrooms in particular kept the nuttiness while easing the richness.

Cheese fried rice to finish the meal

Once we'd nearly finished the signature platter, we ordered fried rice. It's hard to skip fried rice at a gopchang restaurant, so we went ahead and added cheese too.

The rice was fried right on the same grill where we'd cooked the gopchang, and as the cheese melted over it, that same nutty aroma rose back up. The salty fried rice with soft melted cheese kept my spoon moving even after I was already full.

Personally, I found adding cheese much more satisfying than plain fried rice. If you're looking for gopchang in Magok and want to eat well right to the end, the signature platter plus cheese fried rice combo is a solid choice. Enjoying the richness of the gopchang first and then finishing with fried rice made the meal feel properly complete.
