If you're looking for a suyuk (boiled sliced pork) spot so tender it disappears in one bite, let me introduce Dambaek Jujeong (담백주점), my pick for the best Sangsu suyuk restaurant and Sangsu Korean pub! It sits right between Sangsu and Hapjeong stations, so it's super accessible, and I got to enjoy a generous plate of pork jowl suyuk plus kalguksu in a really nice atmosphere. The pork jowl suyuk, boiled in barley broth, was so soft that I was already thinking about it again the moment I walked out :)

Ta-da! Here's the pork jowl suyuk for two that we ordered. Boiled in barley broth, the portion was generous and it looked moist and tender just by looking at it. One bite in, and it really did melt in my mouth! Rather than greasy, it was clean-tasting and savory yet soft, the kind of flavor that keeps you reaching for more. This, honestly, is the biggest reason I'd recommend Dambaek Jujeom as a Sangsu suyuk restaurant :)

There's a good variety of side dishes to enjoy alongside the suyuk — cabbage kimchi, dried radish, chili peppers, garlic, ssamjang (seasoned dipping sauce), and salted shrimp all come out. There's also a nice range of wrap greens like lettuce, perilla leaf, and cabbage. With so many side dishes, it's fun to try a bit of everything.

Making a full wrap was the tastiest way to eat it! Crisp cabbage topped with pork jowl suyuk, chives, and spicy chili was delicious, and so was lettuce piled with suyuk, dried radish, and garlic all wrapped up in one bite!

Even without wrapping it, eating the pork jowl suyuk lightly with chives, dried radish, and ssamjang in one bite was really tasty too! I think it's because even the side dishes at Dambaek Jujeom are just that good.

I'd definitely recommend saving a few pieces of the pork jowl suyuk. After eating a good amount of the suyuk, add vegetables and kalguksu (knife-cut noodles) to the broth and let it simmer, then toss in the saved suyuk, sliced up — it's pure bliss! The broth was mild and clean, not sharp at all, making it the perfect way to finish after the suyuk. It tasted even better with a bit of kimchi or dried radish on the side.
