The Korean beef butcher shop I think of every time I visit Hoengseong
Hoengseong Hanu Jeongyukjeom (횡성한우정육점) is a local-recommended Korean beef spot I end up visiting every time I go to Hoengseong. This is Korean beef remembered for its flavor rather than its grade! If you are heading to the upcoming Hoengseong Korean Beef Festival, stop here first~ It is much better than the festival venue.

Hoengseong! When you think of it, you think Korean beef! I was in town for the Hoengseong festival this time, and I simply could not pass by without stopping at Hoengseong Hanu Jeongyukjeom again~ At this point, it was not just a repeat visit but probably my third repeat visit. I am satisfied with the meat every time, so it has naturally become a place I think of whenever I come to Hoengseong >,<

Especially after becoming pregnant, I have been more careful about what I eat, and there is nothing quite like Korean beef as a nourishing meal. Delicious protein is the best!


The fun of choosing the grade and cut myself
As soon as I stepped inside this time too, it was fun just looking at all the different Korean beef cuts! From sirloin to specialty cuts, there was such a variety, prepared across different grades. Rather than automatically choosing only expensive meat, it was easy to pick according to the cut I wanted and my budget.


Last time, I really enjoyed jebichuri and upjinsal, but this time I brought home Grade 1 Hoengseong Korean beef sirloin and Grade 2 Hoengseong Korean beef trosisal (hanger steak)! I chose the lower grades for an easy meal at home! But the meat here exceeds expectations every single time... haha.
The vacuum packs looked so appetizing too. There were tenderloin, rib meat, sirloin, ribeye, trosisal, and more. They also had frozen tripe and thin-sliced Korean beef. Aged Korean beef was in the refrigerator beside it! This Hoengseong butcher shop really has everything.
Last time, the yukhoe (Korean beef tartare) + beef brisket combo was incredible too... ♡ Drool ♡


My husband is serious about meat, and when he looked at the grades and prices, he said they were genuinely good. I love anchangsal, but it was sold out this time. I was disappointed, so I picked trosisal after being told it was similar!

I brought home one pack each of sirloin and trosisal, and there was plenty even for two people, which was satisfying! You can ask for beef fat if you want it, and they packed everything carefully with an ice pack.

What did the trosisal taste like?
Grade 2 Hoengseong Korean beef trosisal. I had no idea trosisal could be this delicious! I personally really like anchangsal and trosisal, and this is a cut I would absolutely recommend to anyone who enjoys the clean yet deeply meaty aroma unique to specialty cuts.

As the Hoengseong Korean beef cooked, its aroma was incredibly rich too! It was pleasantly chewy but not tough with the first bite, and the more I chewed, the more savory juices and clean flavor came through. So, so good haha.

I was especially surprised once again because this trosisal was Grade 2 but truly delicious...! Some people may think anything other than 1++ is disappointing, but I think trying Hoengseong Hanu Jeongyukjeom might change their mind a little haha.
The saying that you recognize good meat in your mouth before you see the grade label fit perfectly. If, like me, you prefer leaner cuts where the meat's natural flavor comes through strongly rather than fatty cuts, I totally recommend the trosisal at Hoengseong Hanu Jeongyukjeom!



Grade 1 sirloin with just salt
Grade 1 Hoengseong Korean beef sirloin. Sirloin is something you simply cannot leave out when it comes to Korean beef! The bright red meat and just-right marbling looked like they were begging to be grilled immediately.

When grilling it at home, I could get beef fat from the owner too. I melted a little into the pan and spread it around like a coating before adding the sirloin, and the savory flavor really came alive. Korean beef does not need lots of toppings—just a light dip in salt is enough!!!
I cooked the outside golden while keeping the inside moist, and it was so tender and juicy that I could hardly believe it was Grade 1. I thought only 1++ Korean beef was delicious, but it reminded me again that freshness and choosing the right cut matter more than the grade! Hoengseong Korean beef's distinctive savory flavor filled my mouth, so after one piece, I kept reaching for another... haha.
My husband said it melts right in your mouth... Hoengseong Hanu Jeongyukjeom does not only sell Korean beef; it also has a range of cuts, yukhoe, yuk sashimi (Korean-style raw beef slices), beef bones, and more, so it is fun to try a new cut every visit. It is also nice to ask the owner for recommendations if you have a cut in mind. The explanations are so kind that even people who do not know much about meat can visit without feeling intimidated!!

I grilled it at home the day after buying it, and it was so delicious that Apple, the baby in my belly, moved around like crazy throughout the meal... hahaha. Maybe Apple knows what is delicious too >,< If you are visiting Hoengseong for a trip, festival, or camping, do not just pass by—definitely pick up a pack of Korean beef!
This was another third repeat-visit review of Hoengseong Hanu Jeongyukjeom, delicious without fail haha. I am already looking forward to seeing which specialty cut I will try next!
