Chilseong Jemyeonso Suji Main Branch is a true gem in Seongbok-dong, offering a variety of noodle dishes and hearty meals that satisfy everyone, young and old! Based on a deep, rich broth carefully simmered in a cauldron every day, you get a top-notch bowl where the chewy noodles pair perfectly with the broth.

My friend likes noodles more than rice (Timmy//// which is why her nickname is 'Noodle-jin'). She's tried every noodle dish at 'Chilseong Jemyeonso Suji Main Branch' and says they're all delicious — it's genuinely a great restaurant.

So of course, being a good restaurant, we ordered the most popular signature item, the basic noodles. It felt like even janchi guksu (banquet noodle soup) turns out differently depending on the noodle quality???! The noodles were really soft and chewy.

The broth was really clean — not clean from pepper, but the rich flavor of the stock itself was clean and subtle~~~ with a slight spiciness rising up, which was really delicious. The broth was so clean and refreshing that eating the noodles felt like it settled my stomach. 💛😇

Aqua pork cutlet soba set

We also ordered the aqua pork cutlet soba set and the minced meat bibimbap. First, the pork cutlet soba set comes with cucumber on top of the cutlet and a refreshing sauce drizzled on, so you can eat it in a cool, refreshing way. Think of it as a totally summer-vibe pork cutlet.

Plus, soba comes alongside it, so it's really filling. Sometimes fried food can feel heavy from the oil, but the cucumber definitely made it taste cool and refreshing.

✨✨ The soy sauce dipping sauce is especially the kicker. It's sweet and salty, with really good umami.

Minced meat soboro bibimbap

And the minced meat bibimbap was really good too. This is a Seongbok-dong restaurant where you can eat hearty rice dishes as well as noodles. The meat is crumbled and topped on like soboro (minced meat topping), giving a really nice chewy texture.

Side order: seasoned fried mandu

And this time we ordered seasoned fried mandu (dumplings) as a side dish. Basically the regular fried mandu is tossed in a tteokbokki- or tteok-skewer-style sauce, and it was really delicious. It tastes like seasoned tteok-skewers, which keeps pulling you back for more, and since they're fried right when you order, they come out perfectly crispy.
