How was the first dish, beef galbisal?
The first thing I ordered at Dwaegal Gongmyeong Soba was beef galbisal (boneless short rib steak).

Grilling the galbisal over charcoal brought up a gentle smoky aroma from the meat that really got my appetite going.

Galbisal isn't heavily sauced like pork galbi, so it's good for enjoying the flavor of the meat itself — a nice first dish. Picking up a bite grilled to a good size, it was chewy with a savory meaty flavor, and the charcoal grilling seemed to bring the flavor out even more.

Personally, I found it better to eat the galbisal right when it hit the right doneness rather than grilling it too long, to really enjoy the texture and juiciness. Having the galbisal first made the pork galbi I ordered next taste completely different, which made trying multiple dishes together more fun.

Charcoal-grilled Dapsimni pork galbi — how's the marinade?

You really can't skip pork galbi grilled over charcoal.

When meat goes on real charcoal, the marinade caramelizes and gives off a sweet aroma along with a gentle smoky scent. Dwaegal Gongmyeong's pork marinated galbi isn't harshly sweet — the fruit-and-vegetable based marinade pairs well with the meat.

Eating the golden-browned pork galbi, you get the marinade's gentle sweetness along with the meat's own flavor. The charcoal grilling gives a slight smoky edge on the outside while keeping the inside moist — that was the highlight. Eating it with scallion shreds or lettuce wraps in particular cut through the galbi's characteristic sweetness, keeping me reaching for more.

It felt like a shame to only eat meat at Dwaegal Gongmyeong Soba, so I also ordered yukhoe bibimbap. It's also sold as a lunch item, but it worked well alongside the meat as a meal too.

Eating only meat can get a bit heavy after a while, but pairing it with yukhoe bibimbap made the meal feel more substantial. If you want to eat meat and rice together, ordering yukhoe bibimbap as a side dish seems like a good idea.
Soft, savory cheese egg custard
I also ordered cheese egg custard alongside the meat. Egg custard is a side dish you don't want to skip when eating charcoal-grilled meat, and adding cheese made it even more savory and soft.
After eating saucy meat like the pork galbi, a spoonful of the cheese egg custard's soft, mild flavor was a nice palate reset in between — it paired well.
