Why 300g per serving gave me pause at this Dapsimni pork galbi spot

When two guys in their twenties walk into a Korean BBQ place, the first thing they calculate isn't the vibe or the interior — it's how many grams of meat they're getting. We needed to handle dinner near Dapsimni Station that night, and we really wanted to avoid the disaster of eating just okay and then having to grab a second meal afterward. So while scanning the menu, my finger froze on the number: one serving was a whopping 300g. Marinated pork ribs, 300g for ₩19,000. With two of us, there was no need to deliberate — we started with two servings, 600g total.

The place was Dwaegal Gongmyeong Soba Dapsimni Station Main Branch (돼갈공명소바 답십리역 본점). Address: 1F, 12 Gomisul-ro, Dongdaemun-gu, Seoul, South Korea. It's about 317m from Exit 1 of Dapsimni Station on Line 5, so roughly a five-minute walk. No need to wander through a maze of alleys — just walk toward Gomisul-ro and you'll find it on the first floor.

Hours run from 11:00 to 22:00, with a break time from 15:00 to 17:00. If you're going for dinner, just plan for after 5pm.

Our goal that evening was clear from the start.

Two servings of marinated pork ribs.

We decided not to even look at the other menu items. If you linger over the menu at a BBQ place, you end up adding an egg steamer here, a soybean paste stew there, one thing after another. We figured we'd try the meat first and think after that. Just exercising that much restraint already felt like half the battle won for the night.

Marinated pork ribs: 300g for 19,000 won, grilled over charcoal

The marinated pork ribs cost ₩19,000 per 300g serving. With two servings ordered, the meat alone came to ₩38,000. According to the restaurant, they use domestic fresh pork neck and ribs marinated in a sauce made from blended fruit and vegetables.

And there's one important element at this restaurant.

Charcoal.

Grilling marinated pork ribs is a fairly hands-on process. You can't just toss the meat on the grill and zone out like you would with plain meat. Because it's coated in marinade, you have to keep watching the relationship between fire and meat. Once one side starts cooking, you flip it, check the edges, flip again.

During this process, I got greedy once. Wanting to eat a piece as fast as possible, I piled the meat onto the hottest spot in the center.

That was mistake number one.

In front of pork ribs, the impatient person loses.

Once the marinade hits the charcoal, the edges darken fast. From that point on, whoever's holding the tongs isn't really eating dinner anymore — they're managing the grill. Flip one piece, move another over, check on yet another. The moment your companion picks up their chopsticks and waits, a strange sense of responsibility kicks in.

That night's grill master was whoever had the tongs.

Watching the meat get shuffled between the center and the edges of the grill, you realize that even a single piece of pork rib requires traffic management. Pieces that reached the right doneness got cut into bite-sized portions and cooked a little longer.

And finally, the first piece.

How the marinated ribs at Dwaegal Gongmyeong Soba tasted

With marinated pork ribs, the first bite and the third bite feel quite different. At first you notice the outer layer, slightly firm from contact with the charcoal. On the second bite, the tender grain of the inner meat opens up, and the marinade and juices that had soaked into the meat follow right after.

It wasn't a case of sugar punching through first — it felt more like the marinade's flavor trailing behind as you chewed the meat. Maybe because I'd read the description about the fruit-and-vegetable marinade beforehand, it didn't just leave a sweet aftertaste; it felt built around eating the flavor together with the meat.

The bone-in ribs in particular are hard to pass up.

Bone-in pork ribs on the grill

After eating the lean part first, pulling off the meat clinging to the bone changes the texture entirely. It's a bit chewier, and the meat flavor lingers stronger the more you chew. There comes a moment when you try to manage with chopsticks and eventually just want to use your hands.

This is where a small dilemma appears.

How politely should you eat bone-in ribs at a BBQ restaurant?

At first I tried to pick at it politely with chopsticks. I gave up after two attempts. Leaving meat behind on the bone felt almost disrespectful to the ribs themselves. In the end I ate it as thoroughly as I could. In moments like this, the ribs come before your table manners.

I figured 600g would be plenty.

Bibim naengmyeon for 9,000 won: when should you order it?

Looking at the meat alone, the portion really wasn't small. But there's a problem that always shows up while eating pork ribs: you start wanting to reset the sweet, savory marinade taste lingering in your mouth.

That's when the bibim naengmyeon at ₩9,000 caught my eye.

I'm not usually the type who has to finish meat with cold noodles.

But in front of pork ribs, that usual principle collapses surprisingly easily.

So we ordered it.

A bowl of bibim naengmyeon that arrived after ordering

After loosening the cold noodles and mixing them with the sauce, one bite completely shifts the temperature from the hot ribs we'd just been eating. Chewing the springy noodles brings in a spicy, tangy flavor that resets the whole flow in your mouth.

Here's where it gets more interesting — if you've saved a piece of rib.

Bibim naengmyeon noodles lifted up with chopsticks

Take a bite of bibim naengmyeon and pair it with a piece of pork rib, and the sweet flavor and charcoal aroma of the rib layer on top of the spicy-tangy sauce of the noodles. It's a different combination from eating ribs on their own, one after another. So I realized it would have been better to order the noodles before finishing all the meat.

Ordering the cold noodles only after finishing all the meat was mistake number two that night.

I should have saved a few pieces of rib for the noodles!

The last few pieces of marinated pork rib remaining

Put two servings of marinated pork ribs on the grill. Focus on the ribs themselves for the first round. And when only a few pieces are left, call for the bibim naengmyeon.

This time, I finally understood.

The last piece of pork rib is meant to be saved for the cold noodles.
