After looking around pop-ups in Seongsu-dong, I went to Marblejeong (마블정) for lunch. I ordered the 400g premium Korean beef assortment, and it was easy to focus on the meal because the staff grilled it from beginning to end.

Where is Marblejeong, and was there a lunch wait?

Marblejeong is on the second floor of a building on the main road at 57 Seongsui-ro, Seongdong-gu, Seoul. It was a convenient stop for a meal after exploring Seongsu-dong. I visited during the lunch rush, but was seated right away without a wait that day.

The interior had soft lighting and a modern design, creating a calm atmosphere. It was spacious with many tables, as well as separate private rooms. I sat at a window-side table for four. I thought it would also suit a date, a meal with parents, or a company dinner.

What was at the self-service bar and among the side dishes?

The self-service bar in one part of the restaurant had tteokbokki (spicy rice cakes), japchae (stir-fried glass noodles), wrap vegetables, and kimchi. I could take as much as I wanted, which made them good accompaniments to the meat.

The table was set with salad, spicy and tangy fresh kimchi, pickled dishes, and several sauces. I ate the side dishes first before the meat cooked, then changed up the wraps and sauces once the meat arrived.

On the day I visited, the assortment included sirloin, skirt steak, boneless short rib, and beef brisket. The meat had even marbling, and the staff checked the grill temperature while cooking each cut in turn.

How did I eat the first grilled sirloin?

Sirloin was grilled first. Mushrooms, asparagus, and whole garlic cloves went onto the grill with it. The thick-cut sirloin was crisp on the outside and moist inside.

I first dipped a piece in salt to taste its savory richness. After that, I tried it with the house sauce, in wraps, and with the side dishes. The same cut felt different depending on what I paired with it.

How did the boneless short rib and skirt steak differ in texture?

The boneless short rib I ate second had a chewy, springy texture from the balance of fat and meat. The skirt steak, grilled third, had a noticeable grain and became more savory as I chewed. It was also fun to pair them with the different side dishes.

What did I pair with the final beef brisket?

Finally, I grilled the thinly sliced beef brisket. It cooked quickly and gave off a nutty aroma; when I ate it, it was chewy with a rich beef flavor. Paired with mushrooms and asparagus, then dipped lightly in wasabi and salt, it did not feel overly rich to me through the end.

What I especially liked about this lunch was being able to eat comfortably without grilling the meat myself. In the calm space, I tried several cuts in sequence and had a leisurely meal with the self-service bar dishes as well.
