On this Jeju trip my sister suddenly said she wanted beef, so we went to Dolgyeok Hanwoo, a 1++ grade hanwoo grill spot on Jewon Nuwemaru-ro in Jeju City! It's really close to Jeju Airport, so it's a great spot for the first night of a trip or right before heading to the airport on the last day. It's also on the main strip in Yeondong, where Jeju City locals most often meet up, so it seemed like a great place to grab a coffee or drinks afterward too haha.

We visited around 9pm and there were tons of local Jeju residents stopping by after work, not just travelers like us — it really felt like a spot locals love! There were so many tables, and the chairs were comfortable enough to sit in for a long time, so it looked great for small gatherings or company dinners too.

Grilled items at Dolgyeok Hanwoo have a minimum first order of 300g, but you can mix in 100g units! So we put together a solid combo of hanwoo galbisal, manong galbisal, and special cuts, 100g each!

There were also lots of drinks that fit right in on Jeju, from house-made liquors like bok-soju, bok-soju cocktails, and lemon soju to Hallasan soju, Jeju makgeolli, and bokbunja!

The basic table setting and side dishes
Here's the basic table setting! It's a clean, solid spread :) The side dishes and special sauces that bring out the meat's flavor in different ways already had us excited.

This dressed lettuce was really good! Fresh lettuce tossed fresh with a sweet-and-sour dressing, perfect to pair with the meat.
There's also napa cabbage kimchi, crunchy seokbakji (radish kimchi), cucumber salad, and salty pickled onion and chili — side dishes that cut through the richness of the meat and clean up your palate.


How many sauces? Garlic-chili soy sauce to fresh wasabi
Beef with good marbling can easily get rich and heavy, but this place has a wide range of sauces — garlic-chili soy sauce, a spicy sauce, classic wholegrain mustard, fresh wasabi, salt, and ssamjang — so you can mix and match. Combining different ones feels like trying several different dishes, and I think the real strength here is being able to find the combo that suits each cut best and enjoy it all the way through without getting bored 👍


When you order manong galbisal, it comes with a garlic-chili soy sauce made for putting on the grill and reducing down! As the sesame oil and seasoned garlic simmer down, the sharpness burns off and the deep, savory garlic flavor comes through, giving the meat a much richer taste.

The 3-step eating order at Dolgyeok Hanwoo
On one side of the table at Dolgyeok Hanwoo, there were tips written down for enjoying the meat, and following them in order lets you experience 200% of both the meat's natural flavor and the savory garlic seasoning! Let me walk you through the course my sister and I tackled cut by cut, like conquering each one haha.

1. Hanwoo special cuts: grill to 80% and dip in salt
First up on the grill is the hanwoo special cuts, with their deep red color and rich meaty aroma! 🥩 Don't overcook it — grill to about 80% done and try the first bite with just salt! The juices burst and it's incredibly savory. Here, 80% doneness means the surface is browned and looks fully cooked, but when you press it with chopsticks or cut it in half, a bit of pink remains inside!


2. Hanwoo galbisal: salt and fresh wasabi first, then garlic-chili soy sauce
Next up is the hanwoo galbisal, famous for its gorgeous snowflake marbling and rich flavor! Grill it gently to about 80% too, and start clean with a light dip in salt to enjoy the savory fat, plus a touch of fresh wasabi.

Next, dunk it fully in the garlic-chili soy sauce! That sauce is the real kick for galbisal! Loaded with finely chopped scallions and spicy chili, dip the galbisal deep in it and pile the scallions and chili on top — the richness that could otherwise feel heavy disappears and the savoriness is maximized!! 👀

3. Manong galbisal: grill to 90% and eat as seasoned
Last is this restaurant's signature dish, the manong galbisal piled high with pungent garlic seasoning, a clean way to finish! Grill the manong galbisal to about 90%, browned nicely so the garlic seasoning blends in well. For the first bite, don't add anything else — just savor the sweet, pungent flavor of the grilled garlic seasoning itself! Here, 90% doneness means almost all the pink inside is gone and it's turned an overall brown color! If you cut it open and see just the faintest hint of pink, or it looks nearly fully cooked, that's about 90%!

Free refills of 1++ brisket miyeokguk
The complimentary miyeokguk (seaweed soup) here is seriously amazing! It's made with 1++ hanwoo brisket, and it's unlimited refills too!! The taste is exactly like the rich miyeokguk your mom makes lol. It's great for warming up your stomach before the meat starts grilling, and taking a spoonful in between bites cuts through the richness completely! The broth is so clean and deep that it makes you want to mix it with a bowl of rice even before you start on the meat — a hidden gem 😋



The side to order: mustard-leaf kimchi bibim noodles
You can't skip a noodle dish as a side when eating beef, right? Haha. So we ordered the mustard kimchi bibim noodles, and we would've really regretted skipping it!!! ✨ The crunchy, sharp gatkimchi (mustard leaf kimchi) comes tossed thickly in the sauce, the noodles are chewy, and the seasoning has just the right amount of spice, so it's delicious alongside the meat 👏 The portion was really generous too, enough for both of us to fill up. If you visit, make sure to order this mustard kimchi bibim noodles as a side!!!

Finishing with Gujwa carrot juice
Once you've thoroughly demolished the meat and you're about to burst, let the staff know and they'll bring out a clean glass of Gujwa carrot juice for dessert! Everyone knows Jeju's Gujwa carrots are famous 🧡 It's 100% pure-pressed juice with none of the bitterness, just the naturally sweet, refreshing carrot flavor, which resets your palate completely after all that rich meat!
