Mohyeon-dong gukbap in Iksan, spiced up with dadaegi: Sumine Gukbap

I visited Sumine Gukbap, an Iksan gukbap favorite. It's a traditional gukbap restaurant carrying the warmth and generosity of Kim Soo-mi, the household name in Korean home cooking. They say the menu blends long-simmered broth, hearty ingredients, and the care of home cooking, packing simplicity and depth into a single bowl of gukbap.


Inside Sumine Gukbap: atmosphere and seating
The restaurant is spacious and the tables are spread far apart, so you can spread out comfortably, and since they have baby chairs on hand, it's great for family visits too. Sumine Gukbap says it aims for the warmth of eating with family, the sense of comfort a generously filled bowl of gukbap gives, and a relaxed atmosphere like eating at home. A meal that fills more than just your stomach — that fills your heart too, fitting for all kinds of moments in life — that's apparently Kim Soo-mi's philosophy.

Self-bar side dishes and house-made kkakdugi
The self-bar has extra side dishes, chili peppers, ssamjang, and dadaegi. You can help yourself to whatever side dishes you like. With gukbap, the side dishes — especially the kimchi — really need to be good, and Sumine Gukbap's tasted fresh and delicious, probably because they make it themselves. The kkakdugi especially was so much my style.

This is the pork gukbap. It's packed full inside, and the glass noodles weren't the usual thin kind — they were noticeably flatter.

The broth had a rich, smooth flavor.



How to spice up the broth with dadaegi
Wanting it spicier, I stirred in some self-bar dadaegi, and it took more than I expected to get the color I wanted, haha. Once the dadaegi went in, the broth turned properly spicy, refreshing, and sharp. If you want a spicy broth like me, I'd recommend eating a bit first, then adding the dadaegi.

A tip for eating the sundae
Here's a tip: when eating sundae, dip it in chojang (vinegared chili sauce) first, then dip it in perilla seed powder — so good. Definitely try eating it this way.
