A course meal built around pork sounded a little unfamiliar at first! But after visiting and tasting it myself, I was really impressed by the well-structured course and the harmony between the pork and its garnishes ➰ It was such an inventive, special meal that I left feeling like I’d been given a truly happy treat.

Don Tamguso near Magok Station: Location and atmosphere

Don Tamguso (돈탐구소) is about a five-minute walk from Exit 3 of Magok Station on Line 5, behind Hillstate Eco Magok Station! If you’re driving, you can conveniently use the underground parking at the Botanic Park 3 building. It is close to the subway station, so it is easy to get to and works nicely into a date-night itinerary, too.
A space that explores delicious ways to eat pork: Don Tamguso, a stylish pork omakase restaurant that cooks thoughtfully with a warm heart.

The seating and atmosphere felt casual rather than formal, with a cozy yet stylish interior! You could tell care had gone into everything from the lighting to each small decorative piece, making it so pretty for photos and absolutely perfect for a Magok date.

Don Tamguso dinner course
I tried Don Tamguso’s dinner course today! You could feel the care in the plating of every course, and as I ate, it was clear that even the garnishes for each dish had been chosen with their pairing with the pork in mind.

Soup

First came a celeriac soup that woke up my palate with savory flavor! It was rich and delicious, just right as an appetizer.

Salad

Next was a refreshing salad of dried persimmon, orange, basil, and prosciutto that really got my appetite going before the meal.

Lasagna
Next came shiitake mushroom lasagna! The white ragù, mozzarella, and smoky sauce wrapped the palate in such a full, rich way that it seemed perfect with wine, so I immediately ordered the wine pairing.

Don Tamguso offers wine and highball pairings like this, which were perfect to enjoy alongside the course.

Shio-koji Tenderloin
Then the shio-koji tenderloin, the main dish, arrived! It looked absolutely packed with juices and so delicious just from looking at it, right!? The tenderloin was aged with shio-koji rice malt and served with button mushrooms and sun-dried tomatoes.

It was wonderfully moist tenderloin, with a soft lean texture and every bit of its juiciness coming through.

Cool dongchimi (water kimchi) radish also arrived to enjoy with the tenderloin, and it refreshed the palate so cleanly after the richness of the meat!

Pork Belly with Minari

The second main, pork belly, had a fresh flavor that completely cut through its characteristic richness with fragrant minari (water celery) and spices such as Sichuan pepper, cumin, and fennel working in harmony! I already love the pork belly-and-minari combination, and this was so tasty.

Signature Burger
For the final course at Don Tamguso, you can choose between a burger and risotto, and I went for the house-made burger!

The moist pork patty was infused with onion, maple syrup, and bourbon whiskey flavors, creating a delicious sweet-and-salty burger that maximized the savoriness. It went so well with beer, too.

To finish, there was a sweet coconut milk jelly dessert topped with mango, which made for such a neat, satisfying ending.
