And the music playing in the restaurant was pretty hip too — bossam and kalguksu usually feels like an older crowd vibe, but somehow the music here gave it a younger feel.

The dongjuk (surf clam) kalguksu was unique in that it comes with an hourglass timer. You flip it upright and it's a signal to eat 5 minutes later — and taking that first spoonful right on cue, the broth and the noodles matched up perfectly. The broth gets its heat from chili peppers, and while it's spicy, it's not harsh — just clean and refreshing on the palate. You could really taste the clam's flavor, and it paired beautifully with the chewy noodles. Honestly, it doesn't get much better than this for a Dangsan Station dinner.

What comes with the medium bossam at Cheongun Bossam

As the signature dish at Cheongun, the bossam clearly had care put into it. The meat had a nice springy texture, clearly fresh, and was cooked so well it looked almost translucent — really appetizing.

There's also a sweet, tangy, crunchy julienned radish, and its texture contrasts nicely with the softness of the pork. It was great being able to enjoy such carefully prepared bossam and kalguksu together at a Dangsan Station restaurant. The savory lightness of the bossam and the umami, refreshing quality of the dongjuk kalguksu have a whole different charm from the usual bossam-and-naengmyeon combo, so definitely try eating it this way.

It's made with sesame oil and mayonnaise for a nutty flavor, and it naturally tones down the spiciness of the kalguksu — it works to neutralize the heat in your mouth. What's even more fun is eating this rice ball on top of the bossam: the flavor of the meat, the nuttiness of the rice, and the freshness of the vegetables all come together. It became a whole new taste experience.
