A while back I visited with a friend to enjoy my favorite Slow Village makgeolli at a brewery not too far from home. This particular Guro Digital Complex ('Gudi') bar, also known for its makgeolli brewery setup, is Slow Village Brewery's Gudi branch.
Where is Slow Village Brewery in Guro, and where do you park?
This well-known Gudi bar is located near Exit 2 of Guro Digital Complex Station on Line 2. If you drive, there's 1 hour of free parking right in front of the store. Since we were drinking that day, though, we left the car at home.
Address: 34 Digital-ro 32na-gil, 2nd floor, Guro-gu, Seoul / Hours: Mon–Sat 16:00–4:00 (next day), Sun 16:00–24:00 / Group-friendly, Wi-Fi, reservations, separate men's/women's restrooms, mobile pay, parking, pet-friendly

A 100-seat hall and an in-house fermentation room
This Gudi bar sits on the 2nd floor, and it's spacious enough to seat 100 people, with high ceilings that made it feel comfortably open.

There's also a separate group area, nicely set up for company dinners and gatherings.

Tucked in one corner of the store is a fermentation room where they actually make the Slow Village makgeolli I love.

I thought Slow Village used to only make makgeolli, but visiting again after a few years, I saw they've launched a range of sojus too. I'll have to try one next time haha.

We'd booked ahead through Naver, and sure enough, our seat was labeled with our name as a reserved table. It's a small thing, but it made us feel welcomed.

Spring, Summer, Fall, Winter: how aging changes each makgeolli
At this Gudi bar, it's really one makgeolli split into Spring, Summer, Fall, and Winter depending on how long it's aged. Personally I love Spring, which is 1–3 days after it's made. By the time you get to Winter, more sugar has fermented off, the alcohol content is higher, and the flavor turns heavier — an entirely different makgeolli from Spring. That's the world of fermentation for you!

What we ordered at Slow Village Brewery and what it cost
This time we ordered the all-you-can-drink makgeolli set for two, plus a full plate of tofu kimchi (tofu with stir-fried kimchi).
All-you-can-drink: ₩12,000 per person x2 / Tofu kimchi full plate with boiled pork: ₩25,000

Tasting the Spring makgeolli
We started with Slow Village Spring. It comes in a 1-liter bottle, with a bit of sweetness left in it, making it easy to drink and clean-tasting.

So 500ml per person disappears in no time, haha!

Stir it well with the purple stick and the sediment at the bottom mixes in, turning it a milky color. Wow, gorgeous!
How was the tofu kimchi with boiled pork?
After a drink or two, the tofu kimchi with boiled pork came out quickly.

Wow — the boiled pork slices were thick, and the kimchi was tender and well stir-fried. It's a can't-lose combination.

I figured the heavier makgeolli varieties would pair well with something as punchy as this kimchi dish, so I ordered it accordingly.

One shot of makgeolli, then straight into a bite of pork and kimchi! Ahh, my snack choice was on point haha — a perfect pairing.

Then a bite of tofu with kimchi! The tofu is nutty and full of flavor, and it all comes together beautifully.

Another shot, and this time I grabbed tofu, kimchi, and pork together in one chopstick bite, samhap-style. So good. Turns out Slow Village makes great food too, haha.

Second round: Fall makgeolli, and Winter sold out
Before we knew it, the first liter was gone, so we ordered Fall this time. I'd wanted to try Winter next for contrast, but it was already sold out — whether because guests drank it all before it fully aged, or because Winter fans cleared it out, who knows.

As expected, the Fall makgeolli had fermented further than Spring, so the sugar had dropped off and that signature makgeolli heaviness came through stronger. Still, since the base is so good, it was delicious in its own different style. For reference, more fermentation also means a higher alcohol content.

Is Slow Village Brewery Guro worth it?
Slow Village Brewery's Gudi branch! Visiting again after a few years, it still impressed me — it's great that places like this, with both food and makgeolli at a solid level, exist all over Seoul. It's personally my favorite makgeolli, and with such good value for money, I'll definitely be back.
