Gilchon Sutbul Galbi Seomyeon Main Branch in a Seomyeon alley
I recently found a spot while wondering where to go when I was craving meat in Seomyeon. I came across Gilchon Sutbul Galbi Seomyeon Main Branch (길촌숯불갈비 서면본점) while looking for a good pork-rib restaurant in Busan’s Seomyeon area.
It is not a place where you just eat meat and call it a day—there is a great range of meal dishes too, from naengmyeon (cold noodles) and doenjang-jjigae (soybean-paste stew) to fried rice, so we left properly full.

What about parking and the exterior?
First, Gilchon Sutbul Galbi does not have its own dedicated parking lot. If you are driving, please use a nearby paid parking lot.

It is tucked into an alley a little way from Seomyeon’s busy main area.

A spacious interior with well-spaced tables
When I went inside, it felt cleaner and more orderly than I had expected. At barbecue restaurants, tables are often packed tightly together and you can hear every conversation at the next table.

At Gilchon Sutbul Galbi, the tables are spaced widely apart and there are plenty of partitioned tables, so it felt comfortable to eat here.

It seemed ideal for company dinners, family meals, or get-togethers. Group dining and reservations are available too, so keep that in mind when booking :)
Ordering marinated pork ribs and meal dishes

Gilchon Sutbul Galbi’s signature dishes are fresh pork ribs and marinated pork ribs. We were more in the mood for marinade that day, so we ordered one platter of marinated pork ribs, followed by some meal dishes.
Charcoal-grilled marinated pork ribs
Before the meat arrived, the basic table setting came out first. I loved that Gilchon Sutbul Galbi serves a wide variety of sauces and side dishes, so you can enjoy the meat in lots of combinations. There were ssam vegetables, scallion salad, white kimchi, pickled onions, and sauces that pair beautifully with meat.
Finally, today’s star: one platter of marinated pork ribs.

We ordered the 500 g platter, and as soon as it hit the charcoal grill, that delicious marinade aroma rose right up and got our appetites going.

With marinated pork ribs, the key is to turn them often so the meat does not burn from the marinade!


One bite of the nicely browned marinated pork ribs, and the sweet-savory marinade and charcoal aroma came through together—it was so good.


Eating only meat can get a little repetitive, but adding white kimchi, scallion salad, or pickled onions changed the flavor every time, so I could just keep eating haha.

If you are looking for great pork ribs in Busan’s Seomyeon area, I think Gilchon Sutbul Galbi’s marinated pork ribs are a solid choice.


We grilled even the last of the meat to a lovely golden brown and finished every bit.
Dried-shrimp doenjang-jjigae and cheese fried rice
Then, as we were getting close to finishing, we ordered the dried-shrimp doenjang-jjigae.

It is a rustic-style doenjang-jjigae made with a broth using dried shrimp and big pieces of tofu.

It also had plenty of Cheongyang chili peppers, just the way we like it, making it spicy, savory, and refreshing after the meat.

It was such a good combination with the cheese fried rice we ordered too! We were already full, but we simply could not go without carbs, so we gave it a try.


The tanginess of aged kimchi and the rich flavor of cheese melted generously throughout the fried rice worked so well together. I was completely satisfied with this dish.
Half-and-half naengmyeon with both mul and bibim styles
And the half-and-half naengmyeon my husband ordered was...

It was perfect for my husband, who always struggles to choose between mul naengmyeon (cold noodles in broth) and bibim naengmyeon (spicy mixed cold noodles). It was really nice to taste both in one dish.

I was too full to try it, but my husband raved about how delicious it was.

We polished off the meat and enjoyed the meal dishes too—such a successful, delicious meal. On a day when you are craving charcoal-grilled pork ribs in Seomyeon and want satisfying meal dishes after your meat, I recommend giving Gilchon Sutbul Galbi a visit :)
