I wanted something hearty and warm for lunch, so I went looking for a good ramen restaurant in Mokdong and ended up at Gyedan Ramen Mokdong Branch.

I usually love rich broths like tonkotsu, so instead of the basic ramen I picked something a little different this time — motsu ramen (모츠라멘), topped with grilled beef tripe, called Gyedan Ramen.

I came alone for lunch, and the atmosphere turned out to be more comfortable for solo dining than I expected, so I could eat without feeling self-conscious. It's a solid spot if you want to fill up on a hearty bowl of ramen for lunch.

I ordered motsu ramen and Gyedan ramen that day. Motsu ramen is basic ramen with grilled tripe added, so it would catch the eye of anyone who likes tripe.

I added extra grilled tripe on top of that. The toppings were already generous to begin with, and with the extra added, the portion was seriously huge.

Free rice was also available, but the ramen itself was so filling that I never actually got around to eating it.

As soon as the ramen arrived, the pale, rich broth caught my eye. One spoonful in, and I could taste that distinctive savory depth of tonkotsu — rich but not overly greasy, which I liked.

The noodles soaked up the rich broth beautifully and were easy to slurp down, and with toppings like wood ear mushroom and chashu, there was a nice variety of textures. But the real highlight of motsu ramen was definitely the grilled tripe.

The tripe was cooked to a nice golden brown, chewy and savory, and eating it with the rich broth brought out its distinctive flavor even more. I was glad I added it.

The portion was really generous too — by the time I finished the noodles and toppings, I was already completely full. The rice was free, but there was absolutely no room left for it.

But I loved the broth so much that in the end I finished the whole bowl, down to the last drop.

You can add spicy sauce partway through to switch to a hotter, sharper flavor, which was great for when the rich broth started to feel a bit heavy.

With the extra tripe added, the portion was seriously generous — filling enough that I couldn't even touch the free rice. But what satisfied me most was the broth: it was so good I kept spooning it up until the very last bite.
