A newly opened straw-fire BBQ restaurant in Ingye-dong

These days there are so many BBQ restaurants that a lot of them start to taste the same wherever you go. But this newly opened Jipbul Taebaek Suwon Ingye Branch felt a little different from the very first impression.

I visited for dinner, and being freshly opened, the space was clean and the story behind the food felt distinct, which made me even more excited.

Pre-searing with straw fire and charcoal

True to its name, Jipbul Taebaek's biggest feature is that the meat is pre-seared with straw fire and charcoal. Apparently the beef ribs in particular are carefully selected cuts, pre-seared over intense straw fire to lock in the juices while adding a subtle straw-smoke aroma.

Rather than simply grilling meat over fire, they build flavor during the pre-searing stage and then finish it at the table into a perfectly eatable state — that part really stood out to me.

When that distinct, subtly savory straw-fire aroma seeps into the meat, it creates a depth of flavor that's quite different from ordinary charcoal grilling, right?

I was already looking forward to that first bite — a clean meaty flavor with a hint of smokiness spreading through it.

So a bite dipped plain in salt tastes completely different from one dipped in sauce, and there's a lot of fun to be had trying out different combinations.

If you're someone who really cares about the meat's own flavor, I'd recommend really paying attention to the subtle aroma that comes from the straw-fire pre-searing.

The jowl had noticeably premium marbling, so just looking at it made me expect a nutty richness — and once it came off the straw fire, the subtle smoky aroma unique to straw was really appealing.

One bite in, the surface was grilled to a golden brown, clean and nutty, while the inside kept its juicy moisture, letting me feel both the jowl's characteristic firmness and tenderness at once.

It wasn't overly fatty, but thanks to the marbling, a nutty flavor kept building the more I chewed, and at the end a subtle smoky, straw-like aroma lingered — a depth of flavor quite different from ordinary pork jowl.

It's good with sauce too, but I'd also recommend trying the first piece plain, without anything, to taste the meat's own flavor.

The golden-browned surface had both a nutty fat aroma and a subtle smokiness, while the inside stayed juicy and had a nice chewy texture.

The belly's rich, nutty flavor combined with the straw-fire's subtle aroma cut down the greasiness noticeably, and a clean umami kept building the more I chewed.

The well-grilled parts especially had a nice textural contrast — slightly crisp on the edges, soft inside.

Since it's pre-seared once over straw fire, it's clearly a different flavor from pork belly grilled at home.

Made with a beef broth base, the soybean paste stew had a deep, rich umami right from the broth.

The distinct savory aroma of fermented soybean paste (cheonggukjang) was there, but the broth went down clean rather than heavy, and it paired really well with the meat.

Every spoonful spread a savory, rich flavor through my mouth, with a lingering depth that just calls for rice.

I visited for dinner with high expectations since it was newly opened, and after eating, my impression was that this is a place that really brings out the meat's own juiciness along with a subtle straw-fire smokiness.

Both the straw-fired pork jowl and straw-fired pork belly had thick cuts with that straw-fire aroma added, giving a flavor clearly different from a typical BBQ restaurant.

The premium marbled jowl got nuttier and juicier the more I chewed — surprisingly tender for a jowl cut — and the straw-fired belly balanced a nutty golden-browned surface with a juicy interior nicely.

Above all, the subtle straw-fire aroma kept the greasiness in check, which made me keep reaching for more.

On top of that, the beef soybean paste stew made with beef broth rounded out the meal nicely. The rich, savory broth paired well with the meat and made for a satisfying finish with a bowl of rice.

Overall, the harmony between the meat's flavor and the straw-fire aroma left a strong impression, and I think it's a great spot if you're looking for a different kind of Korean BBQ restaurant in Ingye-dong, or a place for a family meal, team dinner, or evening out.
