What we ordered at Sonsi Sushi

This time I ordered 🍣 the Gasimbi Set and 🍣 Sushi Han-sang | Aged Ilpum (Premium) 12 pieces😚

Ordering was easy through the table kiosk 🤭 At Sonsi Sushi Yeungnam University branch, the sashimi topping the sushi goes through an aging process that adds depth of flavor, so I was already excited before even eating haha.

Gasimbi Set, 26,500 won: sushi, aged soy sauce chicken don and katsuo udon
🍣 Gasimbi Set, ₩26,500. First up was the Gasimbi Set! True to its name (which roughly means 'value for the heart'), it comes with several dishes at once, making it a great choice when you're dining with two people haha.

The set includes sushi along with aged soy sauce toriyaki don (chicken rice bowl) and katsuo udon, so it seems like a good pick for people who have trouble choosing just one menu haha!!

Can you see how springy that udon looks? Can you feel it??? If you're picturing cheap udon, think again ㅠ Having several dishes together instead of just sushi made the meal feel so much more substantial >-<

The sushi had thick slices of sashimi on top, so each bite had real presence. It wasn't sushi loaded up mostly with rice — the ratio of fish to rice was solid, giving a nice balance in every bite!!!✨

I especially noticed the soft, deep flavor unique to aged fish..🤍

Sushi Han-sang Aged Ilpum (premium), 12 pieces for 18,500 won
🍣 Sushi Han-sang – Aged Ilpum (Premium) 12 pieces, ₩18,500. And then, the one I'd really been looking forward to — the Sushi Han-sang Aged Ilpum (Premium) 12 pieces! I'd recommend this menu to anyone who wants to really focus on the sushi itself.

The 12 pieces arrive beautifully arranged on one plate, and just looking at it puts you in a good mood lol♥️ There's fun in picking through each piece one by one, and since the texture and flavor differ slightly by fish type, I ended up savoring it slowly haha.

Especially the flounder! The clean, distinct flavor of flounder was still there, but thanks to the aging, the texture wasn't too chewy — it had a soft bite that I really liked!!!
At first it tastes light, but the more you chew, a subtle umami builds up! If you love flounder sushi, this is the kind of flavor that explains exactly why people seek out aged sushi haha.

Can't skip the salmon either❤️ Salmon has that signature nutty, soft flavor that spreads through your mouth in a wave! Since it goes through kombu-jime aging, the flavor felt a touch deeper than regular salmon — that was another highlight!
And one thing that quietly matters a lot with sushi — the rice ratio! If there's too much rice, it can overpower the flavor of the fish, but here the balance between fish and rice was good overall, so I could really taste the fish properly!!!
Verdict after eating both Sonsi Sushi sets together
Eating both the Gasimbi Set and the 12-piece Aged Ilpum together let me enjoy a wide variety of sushi, and I nearly burst ㅠㅠ It was seriously filling! What I personally loved most was that while eating the sushi, it didn't just feel like 'plain fresh sushi' — I could clearly taste the softness and umami that comes from aging!
