Gwangmyeong Korean BBQ: marinated vs fresh ribs at Seoseo Galbi

I was hanging out in Gwangmyeong and it was almost dinner time, so I wondered where to go—then this time I went to Gwangmyeong Seoseo Galbi (광명서서갈비), near Gwangmyeong Market! I’d seen it around a lot as a popular meat spot near Gwangmyeong Sageori, and I was suddenly craving ribs, so off I went haha.

Since it’s near Gwangmyeong Market, it wasn’t hard to find! There is a little parking space out front, but it isn’t especially roomy, so it’s worth keeping that in mind beforehand. As you’d expect from a rib restaurant, there were quite a few tables inside too, and it looked like a nice option for family meals or larger groups.


The marinated ribs and fresh beef ribs we ordered

Baekjo ordered two servings of Seoseo Galbi, one serving of fresh beef ribs, and mul naengmyeon (cold buckwheat noodles in broth)! I wanted to try both marinated and fresh ribs, so I ordered the two kinds 😎
Because Seoseo Galbi is marinated ribs, the charcoal aroma and sweet-savory marinade smell hit you right away. The fresh beef ribs, on the other hand, let you taste the meat itself without seasoning, so I thought trying both would make the difference really clear haha.
A table full of banchan from the start


Before the meat even arrived, they laid out all the banchan (Korean side dishes)! There were ssam vegetables, pa muchim (seasoned scallion salad), pickled onions, salad, kkakdugi radish kimchi, and other sides that go so well with ribs~
One distinctive thing here is that they also serve spicy marinated raw crab! It’s somehow always exciting when that comes out at a meat restaurant, right? Hahaha. There’s also a self-service bar, so I could easily grab more of any side dishes that ran low haha.

They also brought out a separate sauce for dipping the meat, and it was way tastier to lightly dip the meat in it than to eat it plain!

How we grilled the Seoseo Galbi
First, I grilled the two servings of Seoseo Galbi. The moment the ribs hit the charcoal grill, the marinade started sizzling and that smell came rushing up... ah, impossible to resist.


Ribs can burn easily while grilling because of the marinade, so it’s best to keep an eye on them and turn them on the grill. When I picked up a nicely browned piece, the marinade wasn’t overly sweet; it had a gently sweet and salty flavor, boosted by the charcoal aroma. It was the kind of flavor that makes you want rice.
It was especially good with the seasoned scallion salad: the sweet marinade and the sharp scallion flavor came together perfectly 👍 Of course, putting a piece of rib in a ssam wrap with garlic and scallion salad is the classic move too haha.


Fresh beef ribs are all about the meat itself
This time, one serving of fresh beef ribs! Eating the marinated ribs first and then the fresh ribs made the difference in flavor direction really obvious.

Without a marinade, I could taste the meat’s own rich, nutty flavor more clearly, and the beefy aroma seemed to build the more I chewed!
Personally, I liked the fresh beef ribs more than I expected out of the two. The marinated ribs were delicious in their own way, but the fresh ribs were fun because you got to enjoy the meat itself, if that makes sense... They were good lightly dipped in sauce or with just a little salt, so Baekjo preferred eating the fresh beef ribs as simply as possible.
Going from marinated ribs → fresh ribs made them feel so different even though they were both ribs, and I was glad I ordered both haha.


Cold buckwheat noodles to finish
Once you’ve had meat, you can’t skip naengmyeon... so I ordered a bowl of mul naengmyeon to finish!

Why are cold noodles after meat always so good? Hahaha. A bite of noodles in the cool broth followed by a piece of rib felt like it cleared away all the meatiness left in my mouth!
The mul naengmyeon wasn’t aggressively flavored; it was clean and well suited to ending a meat meal, so it went nicely with the ribs. Personally, I recommend having a piece of rib with the noodles 🩷 Eating it this way meant I could finish the meal cleanly without feeling heavy until the very end!
Final thoughts on eating marinated and fresh ribs together
This time I had the Seoseo Galbi + fresh beef ribs + mul naengmyeon combination, and I think ordering them together was a great call because the two kinds of ribs had such distinct charms. Seoseo Galbi is all about sweet-savory marinade and charcoal aroma, while the fresh beef ribs highlight the meat’s own rich flavor!
Personally, I especially enjoyed the fresh beef ribs, and eating them after the marinated ribs made comparing the different flavors fun too haha. Add mul naengmyeon at the end, and you’ve completed the classic ribs-and-noodles course 🥩🩷 If you’re looking for ribs near Gwangmyeong Market, I think Gwangmyeong Seoseo Galbi is worth a visit :)
