Gwangmyeong Korean BBQ with grilled pork belly: Snug Roastery

In short

Snug Roastery is a charcoal-grilled pork restaurant near Cheolsan Station in Gwangmyeong, Gyeonggi. I ordered two servings of pork belly and limited whole skirt meat; the staff grilled the aged meat over charcoal, while a separate dish for kimchi kept the grill tidy. Verdict: a great Cheolsan Station spot to alternate thick pork belly and beefy-textured skirt meat.

Skirt meat and pork belly at a Cheolsan Station Korean BBQ restaurant

Charcoal-grilled pork belly and skirt meat at Snug Roastery

Today I went for skirt meat and pork belly at Snug Roastery, which does a great job with pork belly near Cheolsan Station!

Soy sauce and pickled wild garlic leaves at Snug Roastery

Here are the soy sauce and myeongi namul (pickled wild garlic leaves). The leaves were not too big, so they were easy to eat. I wanted to taste more of the meat, so the myeongi was just there to support it! There was also ssamjang (seasoned soybean paste), wasabi, and seasoned salt.

Aged pork belly grilled directly over charcoal at Snug Roastery

They grill the aged meat themselves directly over charcoal. At first, eating it without seasoning was the best way to taste the pork belly. It was also nice with ssam (leaf wraps) or myeongi namul.

King oyster mushrooms among the grilling vegetables at Snug Roastery

Extra vegetables for grilling were ₩1,000. The king oyster mushrooms were so tasty that I think adding more would be a good idea. The meat and king oyster mushrooms went really well together.

Chewy whole skirt meat at Snug Roastery

The skirt meat was chewier than the pork belly and almost felt like beef! So clean-tasting! It paired well dipped in soy sauce or wrapped in myeongi namul.

Plump square-cut pork belly at Snug Roastery

And the pork belly—right away~~ I loved that it was the plump, square-cut style of pork belly I like. Haha.

Even looking again, even just looking at the photos, I am seriously salivating. Heh. If you need rice while eating, there is iron-plate kimchi fried rice for ₩5,000 or steamed rice for ₩1,000. They also have buckwheat makguksu (cold buckwheat noodles), so I paused to wonder what to get. Or should I add one more pork belly? In the end, I asked my stomach.

As expected, my meat stomach. Haha.

Kimchi and vegetables at the Snug Roastery self-serve bar

There is also a self-serve bar!! You can take as much kimchi and vegetables as you want.

Ahh... but I was full from the meat, so I will definitely order it next time, hehe.

How was Snug Roastery's Cheolsan Station pork belly and skirt meat?

The pork belly was thick and easy to enjoy. It suited my taste even more when browned nicely and eaten with ssam or myeongi namul. Unlike the pork belly, the whole skirt meat had a beef-like feel, so they were perfect to alternate between. It was good dipped in soy sauce too.

It was convenient that they grilled the meat over charcoal themselves, and I also liked being able to grill kimchi separately, which kept the grill clean. It is close to Cheolsan Station, making it a good place to visit for pork belly or skirt meat. It was packed when I went. If you plan to visit, making a reservation seems more convenient. And of course, eating at a place that grills the meat for you is more comfortable, right?
