My parents were especially pleased with the black-vinegar pork sirloin tangsuyuk (sweet-and-sour fried pork): the thin batter was crispy outside and pleasantly chewy within. It uses Chinese black vinegar, giving it a balanced, not-overdone tang and sweetness,

and my parents were delighted, saying it had a similar character to the vinegar sauce they tasted on their recent package trip to Zhangjiajie . . ෆ
