When I eat out, I tend to prioritize meat that tastes good on its own—its natural freshness and savory depth—over flashy marinades or side dishes.


When I wanted to taste properly juicy meat for the first time in a while, I went straight to Baeksan Hwarro Techno Polis Songjeol Branch, a well-known pork belly spot in Songjeol-dong, Cheongju. It is near Techno Polis Woobang I'You Shell. Parking was convenient, so I felt at ease from the moment I arrived, and the staff's kind service put me in a good mood before the meal even began :)


I was coming from Gaesin-dong, so Baeksan Hwarro's Songjeol branch is a little far for me... But to get straight to the point, it was satisfying enough to save immediately to my list of Cheongju Songjeol-dong meat restaurants!

At first, we planned to have just some aged pork belly and head out for a second round, so we ordered exactly three servings. (Because of my prejudice these days that meat portions are small and expensive..) But as soon as we ordered, the meat arrived with sticker labels attached to the plate, just like at a butcher shop, printed with the exact weight and price. They openly disclose the per-100 g price and actual measured weight, which gave me confidence that they run the place honestly, without any tricks. So we ordered more...

The neatly arranged complimentary sides were just right for cutting through the richness of the meat.

The complimentary sides set out before the meat arrived were all so neatly presented—it made me happy, you know? There was crisp white kimchi and scallion salad to completely cut through the richness, plus macaroni salad to awaken the appetite: only the kinds of side dishes I kept reaching for. In particular, adding a little fresh wasabi to a thick piece of aged meat and dipping it in salt gave it such an elegant flavor. (My absolute favorite combination!)

Once the thick cuts of aged pork belly were on the grill, the ratio of delicious fat to lean meat looked just right.

Honestly, I picked up a piece without huge expectations, but it was wonderfully chewy with no off smell at all, and the savory juices built with every bite.

With such a balanced mix of lean meat and fat, even a light dip in salt, without ssamjang (savory soybean dipping paste), delivered a deep flavor. Restaurants in Cheongju where the pork belly itself is truly delicious are rarer than you might think.

We immediately added one serving of aged pork neck and one serving of pork belly. (Two men and one woman ate five servings in total. Like I said, we were actually going to have only three servings and go for a second round, but the meat was so good that we added more... We ate until we were absolutely stuffed.)

I do not order pork neck at restaurants at all. Unless it is barbecue at a campsite, I find pork neck is usually just dry. But Baeksan Hwarro's aged pork belly in Songjeol-dong, Cheongju, was so delicious that I became curious about the pork neck too. Sure enough, it had a tender texture without dryness and tasted worthy of this Cheongju pork belly restaurant's reputation!

Another specialty here is the complimentary kimchi cheonggukjang (fermented soybean stew), served bubbling in a ttukbaegi (earthenware pot). (You can order more, too.) It is richly flavored and pleasantly spicy without any pungency, and after one bite I immediately ordered a bowl of rice.

The rice also came piled high above the rim of the bowl. A full-on food attack (So I really do love cheonggukjang....) The three of us bent over our bowls and slurped it all down.

Every table around us had one, so out of curiosity we ordered a mulberry highball. The alcohol aroma was not too strong,

and its gently sweet flavor made it a perfectly refreshing cocktail to wash away the richness in the mouth.
