Today I'm bringing you a makchang review from Euljiro haha! Euljiro has so many hip spots, right? And I found a place where you can really soak up that vibe while eating makchang (grilled pork intestine) lol

It's Baegyeom Makchang (백염막창) at Euljiro 3-ga Station!!! I heard it's a place where you can taste proper, original Daegu-style makchang in the Seoul area, so I went with sky-high expectations haha. I hope this helps anyone stuck choosing a work dinner spot in Euljiro, or hunting for a good makchang place there!!!

Come out of Euljiro 3-ga Station Exit 11, walk past Euljiro Odeng, and turn into the alley next to Eulsam Golbaengi, and it's right there!!! I worried it would be hard to find since it's tucked inside an alley, but the sign really stands out, so I found it quickly lol

I think the location is really great for a work dinner in Euljiro~~~ Public transport access is so good, so it's perfect for heading over straight after work haha.

What is Baegyeom Makchang like inside? A salt-farm hut vibe in Euljiro

True to the concept of a makchang place that ages its meat in salt, the restaurant is styled like a hut by a salt farm where you grill meat!!! I opened the door and the totally unexpected atmosphere made my eyes pop lol

The worn, vintage walls have handwritten menus stuck on them, and the room is full of the savory smell of grilling makchang, so I was drunk on the vibe the moment I walked in lol. Real Euljiro charm, a properly hip place haha. It was packed with customers, so it felt lively, and the space itself was just so much fun~~~

What makes Baegyeom Makchang's salt-aged makchang different?

Inside Baegyeom Makchang, introducing its blended-salt aging method

They say Baegyeom Makchang ages domestic makchang in a blended salt with a carefully adjusted salinity!!! And here's the really important point!!! In that process the unwanted gamey smell goes away, and the meat's own sweetness and the savory richness of the fat come out naturally~~~

Makchang is usually dipped in makchang sauce, but they say Baegyeom's is savory and tender enough that even just dipping it in salt works!!! Rather than hiding the taste with seasoning, the salt-aged makchang lets the meat's own flavor shine, and that's the real selling point haha. Apparently original Daegu makchang is rare in the Seoul area, which makes this Euljiro makchang spot even more special lol

We started with 2 servings of Daegu makchang at Baegyeom Makchang! Partway through we added 1 more serving, because it was sooo good!!

Okay, finally time to grill!!! The Daegu makchang comes pre-grilled, and the round ring shapes going onto the iron plate one by one looked so appetizing lol. As I flipped them they turned golden brown and a savory smell started drifting up, and my appetite exploded lolol

I dipped a fully grilled piece lightly in the makchang sauce and took a bite!!! Chewy yet tender, with no gamey smell at all, and I thought, "So THIS is what real makchang tastes like!!!" haha. I guess this is the effect of salt-aging lol. The flavor of the makchang itself really came through~~~
