Czech trdelník café in Dobong, Seoul: cinnamon chimney bread, Uisagye

In short

Uisagye (우이사계) is a café on Uicheon-ro in Dobong-gu, Seoul, that kneads and bakes trdelník, the traditional Czech pastry known in Korea as chimney bread, fresh every day. The writer, who has traveled to the Czech Republic three times, ordered two café lattes and a cinnamon chimney bread. They loved both the crisp, chewy texture of the freshly baked chimney bread and the green space with its floor-to-ceiling windows. If you want a dessert that isn't cake or baked sweets, Uisagye's chimney bread in Dobong is a great choice.

Tired of the usual cake and baked cookies? How about chimney bread today? 🤤 I visited Uisagye (우이사계), a café in Dobong where you can try trdelník, the traditional Czech pastry. I was happy with both the space and the taste, so let me tell you about it 😆

Uisagye hours and the day chimney bread isn't served

Uisagye is at 178 Uicheon-ro, Dobong-gu, Seoul, and it's open from 10:00 to 21:00. On Wednesdays there's no chimney bread and only the café is open, so avoid Wednesdays if chimney bread is what you're after.

Where do you park at Uisagye?

Changsam-dong Public Parking Lot No. 1 is a 5–10 minute walk from Uisagye. It's just the right distance for a light stroll. 👍🏻

Green interior and big windows: the atmosphere at Uisagye

Step inside Uisagye and you're greeted by a lovely green vibe 🌱 The simple furniture goes really well with the freshness.

The wide-open window view gave a great sense of openness, and I think it would be lovely on a rainy day or a snowy day too. If I lived nearby, I'd come here all the time.

The staircase is the accent in this simple space, haha. Love the color! Upstairs there are spaces on the 2nd and 3rd floors too, but we used the 1st floor.

The pretty interior and the sound of the coffee machine running make you feel so relaxed, haha. The aroma was nice too ☕️

What's on the Uisagye menu besides chimney bread?

Uisagye also has dojima roll (a Japanese-style cream roll cake), chocolate cake and chiffon cake, plus drinks for kids.

There's a wide range of choices: all kinds of drinks, patbingsu (red bean shaved ice) and ice cream. There were also lots of teas and a variety of signature drinks.

Trdelník for someone who's been to the Czech Republic three times

But the reason we came to Uisagye that day was to eat trdelník (chimney bread). I've been to the Czech Republic three times, and I ate this traditional Czech dessert every single time. The chimney bread I've had in Korea never tasted the same.. T_T But at Uisagye, even the smell had me really looking forward to it.

Uisagye chimney bread types and chimney gimbap

  • Original chimney bread
  • Cinnamon chimney bread
  • Chocolate chimney bread
  • Cheese chimney bread
  • Sanghamokjang milk ice cream chimney bread

You can have it in all sorts of combinations, and the really unusual one is something called chimney gimbap (?). It was a sandwich with emmental cheese + jambon + arugula, haha! And since chimney bread is round, gimbap (seaweed rice roll), hahaha!

Ordering two café lattes and a cinnamon chimney bread

That day we wanted something simple at Uisagye (you know that urge to go classic..?), so we ordered two café lattes and a cinnamon chimney bread, haha. There are also dipping sauces: blueberry cream cheese, tomato cream cheese and whipped cream, haha. They sound delicious! Just so you know, haha.

Here's the freshly baked cinnamon chimney bread.... 🤤 Can you see the steam?????? hahahaha Eating it right then is when you really feel the chewy + crispy, so I hurry to take a photo, hahaha! (This is the hardest part T_T)

Storing Uisagye chimney bread and reheating it in an air fryer

According to Uisagye's notice, the chimney bread is kneaded by hand every day from good ingredients and baked with care, with no added chemical additives. That way you can always enjoy warm, freshly baked chimney bread.

To enjoy chimney bread's signature crisp texture, we recommend eating it as soon as possible. If you won't eat it right away, freeze it and eat it within 3 days.

  • Stored at room temperature: 1 minute in an air fryer preheated to 180°C
  • Stored frozen: 3 minutes in an air fryer preheated to 180°C, without thawing

How did Uisagye's cinnamon chimney bread taste?

Can you feel the crisp outside and the chewy layers?! Uisagye's cinnamon chimney bread was delicious eaten hot, and just as good once it cooled and turned crispy! Chimney bread comes to mind especially in cold winter.. Next time I want to visit again and try all the different kinds.

I loved being able to enjoy tasty bread and coffee in Dobong-gu in a pretty café with such a cozy atmosphere! If you're looking for a café in Dobong-gu, I recommend Uisagye, haha.
