Daegu gopchang grill with cheese fire noodles: Miso Gopchang Wolseong
In short
Miso Gopchang Wolseong is a Hanwoo beef intestine (gopchang) restaurant in Wolseong-dong, Dalseo, Daegu, that hand-trims offal from cattle butchered the same day in Gunwi. Ordering Miso Gopchang and Miso Daechang (large intestine) brought a free plate of Miso beef heart plus abalone clam soup, and the meal ended with cheese fire noodles and Gunwi-chon doenjang rice. The gopchang and heart were clean and nutty with no gamey smell, while the very crisp daechang will divide opinion.

What kind of place is Miso Gopchang Wolseong in Wolseong-dong, Daegu?
Miso Gopchang Wolseong is a gopchang specialist in Dalseo, Daegu, known for hand-trimming fresh Hanwoo gopchang, daechang, makchang (beef tripe/intestine), and beef heart in-house, then grilling them at their best.

In particular, they only use Hanwoo offal butchered the same day in Gunwi, personally selecting, trimming, and aging the ingredients before serving — the freshness really showed.

Gopchang is a dish where the ingredients and prep make a huge difference, and here it was impressive how they minimized any off smell while keeping the savory flavor and distinct texture of each cut of Hanwoo gopchang.

Many people also come here looking for good beef makchang in Wolseong-dong, and you can really enjoy the chewy, savory texture of Hanwoo makchang, which is different from regular makchang. The clean upkeep of the space and friendly service made it clear why so many customers return.
Atmosphere and interior at Miso Gopchang Wolseong
The moment I walked in, the warm lighting and vintage atmosphere caught my eye first.
An ornate chandelier lit the space softly, adding a touch of elegance, and the overall calm mood made it easy to focus on the meal.
The walls combined traditional-style calligraphy frames with floral wallpaper, giving off a different feel from a typical gopchang restaurant.
Traditional props placed here and there gave it the comfortable, retro feel unique to a Korean restaurant.
Little touches and even arcade games placed around for guests showed care down to the smallest details.
All of this made it a comfortable place for a family meal, a date, or a work dinner alike.
Menu and prices
The menu was set up as follows.

Signature dishes include the Miso Assorted Platter, Miso Gopchang, Miso Daechang, Miso Makchang, and Miso Heart; side dishes include Abalone Scallop Soup, Chive Seafood Kalguksu (knife-cut noodles), and Perilla Oil Steamed Egg; and finishing dishes include Perilla Oil Kimchi Fried Rice, Gunwi-chon Doenjang Rice, Cheese Fire Noodles, and Pot Ramyeon. The Hanwoo assorted platter and Hanwoo gopchang are the most popular, and many diners also order the fried rice to finish.

They also run various events for receipt reviews, so I'd recommend joining in, haha.
That day we ordered Miso Gopchang x1, Miso Daechang x1, Cheese Fire Noodles, and Gunwi-chon Doenjang Rice.
Side dishes and the free abalone clam soup
The basic table came with no fuss — green onion kimchi, pickled onions, and various dipping sauces to eat with the gopchang.

Also, ordering a grilled dish comes with a warm abalone clam soup.
The refreshing broth with abalone and clams cut through the richness of the gopchang nicely, making it a great pairing for drinks too.

The abalone was in good condition, and the plump clams inside had a satisfying bite.
Miso Gopchang and Miso Daechang, plus the free Miso beef heart
The Miso Gopchang was packed with gop (fat inside the intestine), golden brown outside and moist inside.

The more I chewed, the more the savory flavor came through, and the clean taste with no off smell stood out.
The Miso Daechang had a much stronger crispiness than I expected.

The outside was very crispy while the inside stayed rich and fatty — the kind of flavor that could go either way for different people.
The Miso Heart comes free when you order gopchang and daechang.

To me, the heart was the tastiest of all — beef heart needs to be fresh to taste good, and this had a clean, mild flavor with a chewy texture and no off smell.

Its mild flavor made it great to eat in between bites of gopchang and daechang.

The accompanying side dishes and sauces paired well with the gopchang too, keeping every bite enjoyable to the end.
Finishing with cheese fire noodles and Gunwi-chon doenjang rice
After finishing the gopchang and daechang, we still wanted a bit more, so we ordered the Cheese Fire Noodles and Gunwi-chon Doenjang Rice, haha.

The performance of sprinkling on the cheese really caught the eye, haha.
The spicy fire noodles topped with a generous amount of cheese cut through the richness when eaten with the gopchang, making for an interesting combo.

We finished with the Gunwi-chon Doenjang Rice.
The savory doenjang (soybean paste) broth loaded with hearty ingredients made for a filling finish, satisfying both as a drinking snack and a proper meal.
The prize-draw event only Miso Gopchang runs
While we were eating, a staff member suggested we try a claw-machine-style draw event, haha.
I can never resist a fun event like this, so I gave it a try right away — and of course, my hands were as unlucky as ever, ugh.
Drawing 5th place got me ₩500 to try the arcade machine, haha. Talk about a dopamine hit mid-meal, haha.
I heard that getting 1st place on the arcade machine wins an instant ₩10,000 discount at Miso Gopchang or a ₩10,000 Twosome Place voucher, so I tried it — turned out harder than expected, haha. Ended up with the classic ₩0 ending… but it was fun regardless.
After finishing the meal, right next to the arcade machine on the way out, there's an ice cream machine. Thanks to that, I got to finish perfectly with a strawberry ice cream dessert, haha.
