A day for outdoor gopchang in Dunsan-dong
The weather has been pleasantly cool lately, so it is perfect for outdoor dining. Let me introduce Uhwa Gopchang (우화곱창), which has finally set up outdoor tables in Dunsan-dong. It is already known as a great gopchang spot in Dunsan-dong, and it honestly looked as though everyone had made plans to meet at Uhwa Gopchang~! After trying it myself, I could see why so many people come here. The generous banchan (Korean side dishes) also made it a great place for a satisfying meal.

Today, I visited Uhwa Gopchang while looking for a good gopchang restaurant in Dunsan-dong‼️ This time I ordered the assorted platter. It lets you try gopchang (beef small intestine), makchang (beef abomasum), daechang (beef large intestine), heart, and brisket all at once, so it was fun choosing among all the different cuts—and with the outdoor tables too, it was seriously delicious ♥♥♥

Banchan before the gopchang

The banchan included beef miyeokguk (seaweed soup), tteokbokki (spicy rice cakes), perilla leaves, pickled radish wraps, and green onion kimchi, while cheonyeop (raw tripe) and liver were also served free of charge. ♥




It was nice that there were so many little things to enjoy while waiting for the gopchang. In particular, the warm beef seaweed soup was light yet deeply flavorful, and it really settled my stomach. The banchan were such good value that it was fun tasting them one by one before the gopchang arrived.

When you order the assorted platter, the gopchang comes partially pre-grilled, and the staff cook it themselves into easy-to-eat pieces, so we could just relax and eat.




When the gopchang was nicely browned, it was packed with rich, nutty filling, and the flavor got deeper the more I chewed. The daechang was crisp on the outside and moist inside—so rich, with juices that seemed to burst out‼️



The makchang was chewy too, with a great bite, and after trying the brisket and heart one by one, we had somehow almost finished the whole platter. It was more generous than expected, but the two of us cleared it without even coming up for air~ ✨✨
How was the spicy yukgaejang kalguksu?
Spicy hot broth + chewy knife-cut noodles: yukgaejang kalguksu, ₩12,000

The hot, spicy broth has an addictive flavor: behind the peppery heat comes a deep savoriness from the meat and vegetables. The fiery yukgaejang (spicy beef soup) with chewy kalguksu (knife-cut noodles) makes it perfect as a hangover meal too. This was so good it could become addictive! For a moment, I thought they should sell it as a lunch special... haha. You can choose either kalguksu or jjolmyeon (chewy spicy noodles)! I tried both, but personally I think the kalguksu noodles are tastier~>.<



It was such a delicious side dish that I was just as satisfied with it as with the main dish. Because the broth was so good, I kept reaching for it even though I was full. I ordered it as a light side, but it ended up being the dish I remembered most.
A pairing that works after rich gopchang
Personally, I think this would suit people who prefer the nutty flavor of the ingredients themselves over gopchang with aggressively strong seasoning. That said, gopchang is naturally rich overall, so if you eat a lot, it can start to feel a little heavy. But there was green onion kimchi, sauces, and a spicy side dish ready to cut through that richness, so we could enjoy the gopchang even more (~ ̄▽ ̄)~
