Gwangju Korean restaurant with pot-lid chicken stew: Surelsil Bonga

In short

Surelsil Bonga (수레실본가) is a Korean restaurant and grill house in Suresil village, Neungpyeong-dong, Gwangju, Gyeonggi. The writer pre-ordered the pot-lid dakbokkeumtang (spicy braised chicken stew), which needs at least 40 minutes' notice, ate it with rice cooked in an iron cauldron, then had coffee under the outdoor tarp, looking out over green scenery. Surelsil Bonga's gochujang chicken stew tastes clean and deep without any heaviness, good enough to take the leftover broth home.

What is the drive to Surelsil Bonga in Neungpyeong-dong like?

If you're thinking of Surelsil Bonga (수레실본가) as your meat-and-Korean-food pick in Gwangju, Gyeonggi, I'm raising both hands in favor. From my house it takes a little while to get to Neungpyeong-dong, but the road has no traffic lights, and you drive happily through blue sky and rippling green leaves.

Ever since I moved here, I've loved the village name Suresil. It reminds me of Hesse's Beneath the Wheel, and it made me want to walk quietly. You wind along a one-lane road and hunt for spaces you like, like a treasure hunt. Of all of them, Surelsil Bonga is my number one pick among Neungpyeong-dong's Korean restaurants.

Isn't cauldron-lid chicken stew (dakbokkeumtang) one of the images that gets you through summer? We climbed the friendly winding road gently, met Surelsil Bonga's neat exterior, and pulled into the roomy parking lot on the left, into a spot with tree shade.

The sun was already pure summer. Through the wide-open folding doors you could see pots bubbling away on cauldron lids, truly the textbook case of fighting heat with heat. Some tables, like ours, had the chicken stew; another group was boiling the lunch-special kimchi stew on a cauldron lid.

Do you need to reserve the chicken stew at Surelsil Bonga?

Yes. The cauldron-lid chicken stew needs at least 40 minutes' notice, so we ordered ahead. It's more than two people can finish, but no problem, because I always bring my own takeout container. If it's good, I can scrape up every last bit without a second thought.

Even if you arrive at Surelsil Bonga in Neungpyeong-dong without a reservation, there's no need to panic. Besides the lunch special, there's black pork belly pre-seared over rice straw the owners farmed themselves, beef makchang (intestines), and more.

How does the chicken stew at Surelsil Bonga taste?

Even though it's gochujang (red chili paste) based, the stew was clean and deep with no heaviness. It's said to be simmered the way the owner's grandmother did it, and it arrives fully cooked; you just bubble it a bit longer at the table. Big chunks of potato in that clear-looking broth had already stolen my heart.

Broth first. Slurp.

Oh my, so clean! The savory depth of gochujang that was surely homemade coats well-trimmed native chicken. Without even asking, you can taste the care: they clearly didn't skimp on boiling the chicken and washing it clean.

Even my picky companion was impressed by the tidy flavor with zero heaviness despite the gochujang base. We both searched our memories for the cleanest, deepest chicken stew we'd ever had. "This year..." then "within the last 10 years..." then "actually, maybe ever," and we dug way back before reaching a conclusion.

Summer potatoes, floury, soaked up the rich broth, and the chewy native chicken had a spirit that must have been fierce when alive. I tore off a drumstick comparable to my arm length while feeling the breeze pass through the deep green outside. Sweating, but comfortable...

Cauldron rice, side dishes and taking leftover broth home

We ordered cauldron rice (gamasot bap) with the stew. Side dishes were young radish kimchi (yeolmu-kimchi), garlic chive kimchi, oiji (pickled cucumber) tossed in perilla oil, and a salad. First we scooped out the cauldron rice and shared it. Ahh, this satisfying moment.

We ate plenty of the generous stew, then carefully packed every drop into the container I'd brought. That's proof of how good it was. One of my favorite things is to add tteokbokki rice cakes to this thick, rich broth, or potatoes from home boiled to 90% done, and enjoy it a few more times as an aftermeal. Surelsil Bonga's clear, deep gochujang broth would be the ultimate for that.

Drenched in sweat, I made eye contact with the owner, blinked, and said it was delicious, and he looked so pleased. That's how people who make food feel; nothing beats the feedback of someone eating happily.

Outside Surelsil Bonga there are tables under a tarp, with cauldrons and jars as decor. After the meal we brewed a coffee and settled in. Deep green filled a 270-degree view. The older folks who left before us hadn't gone far either. With the cooling natural breeze and fresh greenery shimmering in the shade just before June, who could head straight back?

Surelsil Bonga, a hidden gem of Korean food in Neungpyeong-dong, Gwangju, is going to be a sparkling regular spot for the two of us. Cauldron-lid kimchi stew with ramen noodles... I've got my eye on you.
