Hoengseong butcher shop for Hanwoo gifts and charcoal barbecue

Apparently, this shop has been run by its second generation since as far back as 1979! I expected somewhere that felt very old-fashioned because it has been around so long, but it was actually super hip!
A neatly arranged shop full of Hanwoo and other meats

Hoengseong Hanu Jeongyukjeom, a great meat spot in Hoengseong, was packed with so many kinds of meat. Everything was kept so clean and neatly arranged that it was really easy to browse.

The Hanwoo was packaged so neatly. Looking at the meat in the butcher's display, its bright red color and fine marbling immediately made the freshness obvious. The owner was also great at recommending cuts for what I wanted to make, so you could really feel the expertise. The quality and rich marbling were clearly on another level from an ordinary supermarket, so I did not even have to deliberate while choosing—I just knew it would be delicious, haha.

They use skin vacuum packaging that blocks out oxygen, which is why the meat can look darker from the outside. Once opened and left at room temperature, though, it returns to its original red color! And do not the gift boxes off to one side have such great colors, too?! They looked really luxurious.

Just as explained, everything was neatly packed one portion at a time. There were lots of products across different grades and cuts, which is a big plus since you can choose according to your taste!

There were even more beef cuts, of course, but they also had beautifully trimmed pork belly—everyone's favorite meat—ready on one side.


This Hoengseong Hanwoo butcher shop had not only grilling cuts but also beef neatly arranged for other uses, such as soup.


They also had Hanwoo chadolbagi (thinly sliced beef brisket), which you do not see everywhere—and that is a special treat too, haha.


The chuck flap tail and yukhoe I chose
Chuck flap tail is my favorite, so that is what I picked! Everything looked so good that it was hard to decide, haha.

Have a look at all the different cuts, including Hanwoo sirloin and salchisal (chuck flap). I was surprised by how many neatly put-together options there were that would make such nice gifts!

The yukhoe (Korean-style seasoned raw beef) especially caught my eye. I think yukhoe is extra delicious when you buy it from a butcher shop. This one is made with quality cuts of domestic female cattle and comes with yukhoe sauce and pear, so I picked one up too.


They also sold boiled meat, Hanwoo gomtang (beef bone soup), and boiled cow's feet at affordable prices.

Making gomtang yourself is so hard these days, so I think this would make a really nice gift for parents too.

They also had products to enjoy with meat, such as ssamjang (fermented soybean dipping paste) and cham sauce.

The yukhoe was incredibly fresh too!

It was in such a fresh condition, haha.

Chuck flap tail grilled over charcoal at a pension
I lit up the charcoal and grilled it straight away at the pension's outdoor barbecue area. The charcoal aroma soaked right into the meat and brought out so much more flavor. The outside cooked up crisp while the inside held onto all its juices, making it perfect for barbecue too. Now I can see why it is so well known. The marbling already looked different, and once grilled, it was so juicy! It melted tenderly as soon as I took a bite, then grew nuttier the more I chewed—I ate it in total admiration. Because the meat quality was so good, there was no unwanted smell at all, and we finished every bit without it becoming greasy. With quality like this, I think I would absolutely come back whenever I am craving beef. I highly recommend it to anyone looking for delicious Hanwoo or meat to treat their parents to!!!
