I was looking for somewhere to have lunch near Chonnam National University and was craving Vietnamese food, so I visited Wolmidang Gwangju Chonnam National University Branch. I love pho for its rich broth, and bún chả because you can enjoy fresh vegetables and meat together, so this time I ordered several dishes and really dug in :)

Once inside, the restaurant felt cleaner and more stylish than I expected. The overall atmosphere was comfortable, so it did not feel awkward to come alone, and there were high chairs ready too, making it look like a good place for a family meal as well.

The three dishes we ordered and their portions

We ordered three dishes that day.

  • Brisket pho ₩11,000
  • Bún chả ₩14,000
  • Soy sauce charcoal-grilled bulgogi rice ₩12,000

As the dishes came out one by one, the portions were much bigger than I expected. In particular, you can get unlimited refills of pho noodles, bean sprouts, and cilantro, but the first serving was filling enough for me, so I did not get a refill.

How was the brisket pho broth?

When you come to a Vietnamese restaurant, you have to start with pho, right? Wolmidang says it uses broth simmered for more than six hours, and it definitely tasted rich and deep rather than light. There was a generous amount of brisket and beef belly, and the noodle portion was substantial too, so one bowl leaves you nicely full.

How to enjoy pho with the sauces

Wolmidang also suggests a way to make the pho extra tasty. Mix the spicy-tangy hot chili sauce and the sweet-salty hoisin sauce in a 1:1 ratio, then have it with pickled onions and the pho. After having just the broth, adding a little sauce gave it another layer of flavor, which I liked. Personally, I recommend trying the rich broth as it is first, then adding the sauce halfway through.

Bún chả loaded with fresh vegetables

The second dish was bún chả, one of my favorites! The plate came generously piled with pho noodles, meat, lettuce, tomatoes, microgreens, and even fried items. The vegetables were especially fresh, so the meat did not feel heavy and everything tasted clean together. Wolmidang says it uses fresh vegetables used up the same day, and perhaps that is why the vegetables had such a nice crisp texture.

There is a recommended way to eat it too. Add about one or two spoonfuls of bún chả sauce to the pho noodles and loosen them well, then either pour the sauce over everything or dip each bite in it, however you prefer. I am completely on team dip-it, so I dipped little bites of noodles, meat, and vegetables into the sauce haha. A piece of meat with noodles and vegetables all picked up together paired so well with the sweet-tangy sauce that I kept reaching for more.

Soy sauce charcoal-grilled bulgogi rice full of smoky flavor

I also wanted to try something besides pho or bún chả, so we ordered the soy sauce charcoal-grilled bulgogi rice for ₩12,000. Bulgogi and an egg sat on top of the rice, with sauce added as well, so it looked pretty appetizing from the start. They use antibiotic-free eggs and newly harvested Korean rice, and say curcumin powder is added to the rice.

Best of all, I liked the distinctive smoky flavor from direct grilling in the bulgogi. The soy sauce base was not overly intense, and the charred aroma made it easy to enjoy with rice. Taking a bite with the egg made it soft and gave the meal a completely different feel from the pho.

If you are looking for good pho in Gwangju

After trying all three dishes, each one had its own appeal. The brisket pho stood out for its rich broth and generous portion, the bún chả for fresh vegetables and sweet-tangy sauce, and the soy sauce charcoal-grilled bulgogi rice for its smoky meat and satisfying rice. Above all, the pho portion was bigger than expected, so although noodles and bean sprouts are available as unlimited refills, I was completely full without one. If you are looking for a place to eat alone near Chonnam National University, or Vietnamese food to share with friends or family, I think this is a good option. If you are searching for restaurants in Buk-gu, Gwangju, around Chonnam National University, or for good pho in Gwangju, Wolmidang Gwangju Chonnam National University Branch may be worth a stop :)
