Gunsan pork bone stew restaurant open at 7am: Insaeng Gamjatang

In short

Insaeng Gamjatang Gunsan Branch is a gamjatang (pork bone stew) and bone hangover soup restaurant on Gongdan-daero in Gunsan, Jeonbuk. Looking for an early breakfast during a Gunsan trip, the writer ordered ugeoji gamjatang (small) at medium spice with a bowl of rice, and the staff separated the big bones at the table and topped up the broth, so the portion felt generous. Between the rich, deep broth and the special dipping sauce, Insaeng Gamjatang was a meal where not one drop was left behind.

Spacious dining hall inside Insaeng Gamjatang Gunsan Branch

The interior was wide and clean, and the tables were spaced generously, which felt comfortable.

Seating inside the restaurant with wide table spacing
Table layout that also works for group seating

With so many tables, it looked great for groups or families too. Open from 7am to as late as 3–4am the next day, it's a Gunsan local favorite good for breakfast or a late-night hangover cure after drinks!

Self-service bar, side dishes and restrooms

Self-bar with dishware and side dishes

There's a self-bar where you can grab any dishware or extra side dishes you need.

The self-bar had all the hangover-stew classics — diced radish kimchi, onions, chili peppers and more.

Disposable aprons were also on hand~! For the restroom, you go out the door to a shared restroom in the building, and it was kept nice and clean.

Menu board listing gamjatang varieties

What gamjatang varieties are on the Insaeng Gamjatang menu?

The menu at this Gunsan local favorite: aged-kimchi gamjatang, ugeoji gamjatang, green-onion-kimchi gamjatang, mustard-leaf-kimchi gamjatang, soybean-pulp gamjatang. I only knew about aged-kimchi and ugeoji versions before, but there's aged kimchi, green onion kimchi, soybean pulp, mustard leaf kimchi too — such a range haha. You can also choose mild, medium, or spicy, and there's even a half-and-half option!!

Menu board for specialty dishes and one-bowl hangover stews

Besides gamjatang, there are various specialty dishes and regular one-bowl hangover stews too — and the stew can even come boneless, which is great for anyone who finds picking meat off bones annoying or difficult.

Sign explaining how to eat and the review event

There's a how-to-eat guide and a review event — get 2 draft beers, or 1 highball, or extra noodles/toppings free, so it's worth joining in!!

Basic side dishes and the table setting

On the table were disposable gloves, wet wipes, perilla seed powder, salt, pepper, chili powder, special sauce and more, all ready to use whenever needed — really convenient haha.

Table set with basic side dishes

Here's how the basic side dishes came out.

Plate of diced radish kimchi, a hangover-stew staple
Spicy pickles made with cheongyang chili

True to a hangover-stew specialist, the diced radish kimchi was really good, and the pickles were surprisingly tasty too — with cheongyang chili in them, spicy and sharp enough to perk up your appetite lol.

How does ugeoji gamjatang (small) at medium spice arrive?

Ugeoji gamjatang (small) arriving piled high

I ordered the ugeoji gamjatang (small)! When it arrived I actually let out a 'wow~' haha. Gamjatang piled up like a mountain!!

But the bones were genuinely enormous;;

Large gamjatang bone separated into bite-sized pieces by staff

A whole big bone goes in, but staff separate it into bite-sized pieces for you right there, and explained to let it boil, then lower to medium heat and simmer 5 more minutes. I'd wondered why there was a stopwatch on the table — turns out it's for timing those 5 minutes..!! lol

'Massive' is really the word — so much meat on the bone, and it pulled apart easily too.

Pot of gamjatang loaded with ugeoji greens

Plenty of ugeoji (napa greens) in there too. I picked ugeoji gamjatang because I like something familiar, but next time I want to try the mustard-leaf-kimchi or soybean-pulp versions too!! lol

A generously packed bowl of rice

Ordered a bowl of rice too~!! I always feel like rice portions at restaurants these days are so small, but this one was packed in tight and full. A Gunsan local favorite doesn't earn that reputation for nothing~~!!

Meat separated from the bone
Gamjatang meat dipped in the special sauce

Pork dipped in the house special sauce

I tried dipping the meat in the special sauce — so tender and genuinely so good..T.T. Why is the sauce especially so delicious haha.

A scoop of broth and gamjatang ingredients
Fluffy potatoes and chewy dumpling-soup noodles

The potatoes were fluffy, the dumpling-soup noodles chewy lol.

Broth of the medium-spice ugeoji gamjatang

I went with medium spice, and even as someone weak to spicy food, it was just right for me!! The broth especially was seriously the real deal T.T — thick, deep, and I kept craving more. Came for a hangover cure, ended up wanting a drink again,,

Normally I don't dip meat in sauce when eating gamjatang, but Insaeng's special sauce was so good I even asked for extra sauce lol.

Gamjatang pot refilled with fresh broth

Can you get a broth refill at Insaeng Gamjatang?

As we kept simmering and eating, the broth reduced quite a bit, so I asked and they refilled it for free. Seeing the broth filled back up made me so happy... lol lol lol. Watching the broth get rich again, I kept debating whether to add ramen noodles, but figured I couldn't finish it all so I didn't...?! Looking back now, that's a genuine lifelong regret T.T

True to its name, this was Insaeng Gamjatang itself — everything was perfect... Why isn't there one in my neighborhood,,,, please open an Insaeng Gamjatang in Namwon too...T.T

The verdict after finishing the whole pot

Gamjatang pot emptied down to the last drop of broth

Clean plate!! With so much meat plus the broth refill, the portion was genuinely huge, but it was so good I didn't want to leave a single drop, so I dug in hard 👍👍

Generous portions and deep, rich flavor!! Insaeng Gamjatang Gunsan Branch is a hangover-stew spot that's great for a filling meal — fully crowned my new go-to gamjatang place~ 💕 The staff were also so kind, I had a genuinely pleasant meal 😆❤️ If you're looking for somewhere good to eat in Gunsan, I highly recommend Insaeng Gamjatang Gunsan Branch!! 👍❤️
