Gunsan Korean restaurant with half-and-half gamjatang: Insaeng

Half-and-half gamjatang! If you love gamjatang (pork bone soup), Insaeng Gamjatang is a great option when looking for a good spot in Gunsan: you can try two flavors at once by pairing aged kimchi, green onion kimchi, or ugeoji (dried napa cabbage greens).

I visited Insaeng Gamjatang Gunsan Branch in Suseong-dong for gamjatang on a weekday evening. We reserved for around 17:00 on a weekday and went straight in without waiting, then ordered the small half-and-half gamjatang.
Parking and restaurant information

It is on the first floor at 197 Gongdan-daero, Gunsan-si, Jeonbuk State. It is open 07:00 to 03:00 the following day from Monday through Thursday and on Sunday, and 07:00 to 04:00 the following day on Friday and Saturday; break time is 15:00–17:00. There is a large parking lot behind the restaurant, so

it was easy to visit by car. The parking area was genuinely quite spacious, which I loved because we could head right in without worrying about parking.
Spacious, comfortable seating

Inside, there were spacious wood-toned seats throughout, and the gaps between tables did not feel cramped.

There were also seats by the windows, and everything was neatly kept, so it looked like a nice place for a family meal or gathering, too.

Each table had a tablet, which made it easy to check the menu and order!

Half-and-half gamjatang with two flavors
They had a wide range, from the standard ugeoji gamjatang to aged-kimchi, green onion kimchi, mustard-leaf kimchi, and biji gamjatang with soybean pulp.

What stood out here was that you can choose any two of ugeoji, aged kimchi, and green onion kimchi for a half-and-half gamjatang.

Their haejangguk (hangover soup) also came in ugeoji, aged-kimchi, green onion kimchi, and mustard-leaf kimchi versions, with a boneless option available too. Add-ons included ramen noodles, udon, glass noodles, potato sujebi hand-torn dough, and ongshimi dumplings, so they looked good for sharing when visiting with a group.
Ordered half aged kimchi and half ugeoji

From the moment it arrived, the two sides were clearly divided, piled high with aged kimchi and ugeoji, and it looked quite pretty.

It was great for photos, and it was a good choice when you are curious about both kinds of gamjatang but want them in one pot. The staff cut everything up nicely at the start; boil it vigorously over high heat, then simmer it over medium heat for about five more minutes before eating.
One side had plenty of aged kimchi, while the other was loaded with ugeoji and bones, so we could alternate between the two flavors throughout the meal.

You can choose mild, medium, or spicy, and we chose medium. It was just right without being overwhelming, and with the aged kimchi and ugeoji mingling into the broth, it was the kind of flavor that naturally made me want rice.

There was a good amount of meat still attached to the bones, so as two people eating it, the portion felt bigger than expected.

The small half-and-half gamjatang was quite generous for two, and personally, I thought it could work for three people too.
The house sauce with extra pepper

The table was set with perilla seed powder, house sauce, pepper, salt, and chili powder, so you can add whatever suits your taste.

If you like heat, add more chili powder, and if you love perilla, a generous amount of perilla seed powder works beautifully too.

I especially wanted to recommend adding pepper here. Mixing pepper into the house sauce and dipping the meat right in made me keep reaching for more. The gamjatang itself was good, but this sauce combination quietly stayed in my memory.
Self-service bar and table supplies
The self-service bar had basic side dishes such as onions, peppers, and kkakdugi (cubed radish kimchi), so we could take as much as we needed.

When eating gamjatang, I keep reaching for kimchi and onions, so it was nice to be able to get more easily myself.

Wet wipes were also provided at the table, which was a thoughtful little convenience for a dish where you pick meat off the bones.

An event to check before visiting

The restaurant was also running a visitor receipt-review event. If you introduce the restaurant and verify it, you can choose two 300 cc draft beers, one highball, or one add-on item.

What two people ate and the total
We added one bowl of rice for ₩1,000 to the ₩39,000 small half-and-half gamjatang, paying ₩40,000 in total. It was very generous for two, so we were full without adding any extras. If choosing just one between aged kimchi and ugeoji feels like a shame, the half-and-half option is definitely convenient and fun because you can have both at once.

If you are looking for gamjatang in Gunsan and want to eat aged kimchi and ugeoji together, the half-and-half gamjatang at Insaeng Gamjatang Gunsan Branch should be a good match. We visited after a weekday evening reservation and got in comfortably without waiting, and the large parking lot made access easy too. The generous portion, half-and-half setup, and dipping the meat in house sauce mixed with pepper were especially memorable.
