Today I'm sharing my visit to Makchang Ilbeonji, a great spot in Gunsan for whenever you're craving gopchang (beef small intestine) or makchang (beef large intestine). Freshness really matters with these cuts, and this place delivered on every front — a solid set menu, smoky-sweet grilling, a hot pot fragrant with perilla, and clean side dishes to boot.


They're open for lunch too, so keep that in mind!!

Even though I visited in the early evening, there were already people eating..!!

What comes in Makchang Ilbeonji Set A, and what it costs
Makchang Ilbeonji Set A is ₩50,000, and it includes a mixed grill (gopchang, makchang, daechang, hongchang, heart — 450g total) plus a gopchang hot pot. They also have solid à la carte options, but most people seem to order the set so they can enjoy the grilled mix and hot pot together. We went with Set A too, and it's a menu that nails both value and volume.




Lunch specials at Makchang Ilbeonji start at ₩6,000
There was also a sign for the lunch special (11:30am–2pm, cash price): yukhoe bibimbap (raw beef tartare rice bowl) at ₩6,000 (₩8,000 for the large), hanwoo radish soup at ₩6,000, and hanwoo gomtang (Korean beef bone soup) at ₩6,000 — genuinely great prices for lunch given how things cost these days. Worth coming by for a lunch visit too.



Side dishes plus free raw liver and tripe
They brought out the basic side dishes right away..!!! Salty stir-fried fish cake, perfectly ripened green onion kimchi that goes great with the grilled meat, and golden pan-fried liver and lung — perfect for filling up while the main dishes cook 👍

I was especially surprised that raw liver, tripe, and even spleen/marrow all came out fresh as complimentary service.. 💛


Dipping it lightly in sesame oil sauce, there wasn't a hint of gaminess — just savory flavor, which told me right away this is a place that cares a lot about ingredient freshness 😋

Finally, the star of Set A — the mixed grill..! Just look at that color…✨✨
Gopchang, makchang, daechang, hongchang, and heart all sizzled on the grill together with thick potato slices, enoki mushrooms, and onion, giving off an incredible smoky aroma. The visuals were insane.. It looked chewy just from watching it 🥹🥹
The owner personally grilled and cut even the daechang, my favorite cut. You can really tell the difference an expert's hands make..!!👍

The kimchi bean sprout soup served alongside was nicely spicy too, perfect for cutting through the richness!!


Now just waiting for it all to cook..! The waiting game 🥹🥹
Perilla gopchang hot pot: add a bowl of rice
Around this time, the gopchang hot pot included in Set A arrived❗️ It came topped generously with perilla powder and perilla leaves, and as it bubbled away, the rich, nutty aroma spreading from the broth was amazing 😍

Scooping up a big ladleful, it was packed with springy glass noodles, vegetables, and plenty of gopchang. The broth was rich, nutty, and spicy all at once — the perfect way to finish off the meal after grilling..✨✨ We added a bowl of sticky rice and mixed it into the broth, and honestly it was so good it'll steal your appetite, so make sure to eat it with rice 💛


Eating order: heart first, then gopchang and daechang
The reddish heart cooks first, so I tried it dipped in sesame oil sauce first — chewy yet tender, a real delicacy. You really have to eat things in order for the best flavor..!!!



Next came the gopchang, grilled golden and crisp, packed inside with savory fat, and the plump daechang burst with richness the moment I bit into it~~~~❗️❗️😍😍 Eating them together with the potatoes and mushrooms browned on the grill kept things from feeling greasy — I just kept going!

If you're looking for a good restaurant in Gunsan, or want a full course of clean, savory grilled offal followed by a spicy hot pot, I really want to recommend Makchang Ilbeonji..❣️ Just one Set A order is enough to fill up 2-3 people while trying a variety of cuts, and with the fresh raw liver/tripe service plus the rich perilla gopchang hot pot, it's also a great spot for drinks or a group gathering 🐥🐥
