Veteran General Fish Market Incheon Guwol really delivers on the sukkidashi (small side dishes served with the meal) too — the moment I took a spoonful of the seaweed soup, I knew this place was legit.

The broth is really rich and the seaweed is soft, so it's easy on the stomach. I'd been feeling bloated and indigested before coming, but the seaweed soup completely settled it. The hoe-muchim (spicy mixed raw fish salad) had a sweet-and-sour sauce plus fresh vegetables, so it had great texture and really woke up my appetite.

The salted pollock roe is savory-salty but not overly salty, so it's fine to eat on its own and also pairs really well as a drinking snack.

Extra side dishes are self-serve at the bar. The kimchi pancake is unlimited refill — since you make it yourself, you can tailor it to your taste, which is nice.

It's plump and springy with a nice crunch, and the sweetness builds up the more you chew—

We wrapped things up with seafood ramyeon (instant noodle soup). The broth is spicy and refreshing — perfect for the last course. The noodles have a nice chewy bite, and it's packed with plump mussels, so I was very happy with it.
