In short

Yubok Haemul Kalguksu Dongtan Direct Branch is a pufferfish-broth seafood kalguksu (knife-cut noodle soup) specialist just up from the main alley at Dongtan Central Park in Hwaseong, Gyeonggi. The pufferfish seafood kalguksu and stir-fried baby octopus were ordered, and eating the noodles exactly when the hourglass on the table ran out kept them springy instead of bloated. Rich pufferfish broth plus smoky stir-fried baby octopus adds up to a filling meal at Yubok Haemul Kalguksu.

Complimentary sides: barley rice and spicy radish salad

🍚 Barley rice & radish salad that wakes up your appetite before the meal. Before the main dish arrives, barley rice, radish salad, and kimchi are set as basic side dishes. The staff kindly told me, "Pile the radish salad on top of the barley rice and mix it all together!"

The nutty, popping texture of the barley rice combined with the crisp, spicy-tangy radish salad made for the perfect pre-meal appetizer. I couldn't put my spoon down. 🤤 The kimchi that came with it was fresh-style, spicy and refreshing — as it should be at a kalguksu place — and it was amazing paired with the noodles later!

Pufferfish seafood kalguksu: why you wait for the hourglass

Finally, the main dish I'd been waiting for — pufferfish seafood kalguksu — arrived! The moment the pot landed on the table, I gasped at the incredible visual. The seafood was piled so high it looked like it would overflow the bowl.

Once all the sand in the hourglass falls to the bottom, that's when you should eat it!

the staff explained. I really loved that there was no guessing about when to eat — the timing was designed to hit the peak deliciousness perfectly.

Once the hourglass ran out, I finally took a bite — the broth's deep, refreshing pufferfish flavor washed straight through me. The seafood's umami was rich and thick, and every spoonful of broth pulled a satisfied "aah~" out of me. Thanks to the hourglass, the noodles stayed springy and chewy all the way through without going soft — I was amazed as I ate.

Plate of smoky stir-fried baby octopus

How does the stir-fried baby octopus taste?

The second dish, stir-fried baby octopus. The moment it arrived, the subtle smoky char that hit my nose was amazing! The plump baby octopus wasn't tough at all — the springy, bouncy texture was pure art.

Plump baby octopus coated in spicy sauce

The spicy, mildly sweet sauce was addictive — the kind you want to mix straight into rice. The pairing of the clean, refreshing kalguksu broth with the spicy stir-fried octopus was a perfect balance of sweet-salty-spicy.
