Chilseong bibim jjolmyeon (chewy mixed noodles), 9,500 won

First out was the Chilseong bibim jjolmyeon!

A bowl of Chilseong bibim jjolmyeon

The colorful, clean presentation drew an instant gasp — fresh carrot, cucumber, red cabbage, bean sprouts, and perilla leaves were beautifully piled into the bowl, so it looked healthy and appetizing at first glance.

I mixed it well and took a big bite — wow, the noodle texture is truly something! Thanks to the broth base carefully simmered in a cauldron and the restaurant's own noodle-making know-how, the noodles were wonderfully chewy yet silky. The sauce wasn't overwhelmingly spicy either — it was tangy, sweet, and mildly spicy all at once, so my chopsticks didn't stop until the bowl was empty. It felt like a whole week's worth of stress just melted away!

This is the dish I'd absolutely recommend on a hot day or whenever you're craving something cold and refreshing!

Table setting of the aqua pork cutlet soba set

You dip the neatly plated soba noodles into the light broth, and the noodles' springy chew makes every bite fun. The accompanying aqua pork cutlet uses 100% domestic pork sirloin, and it was crispy outside and juicy inside — exactly what you want!

The cutlet was generously topped with thinly sliced fresh vegetables and cucumber slices, so there was none of that typical fried-food greasiness — every last bite stayed light and crunchy. The soba and aqua pork cutlet combo is honestly fantastic...

The true value of a noodle dish comes from a deep broth! Since it's brewed directly in a cauldron, the first sip filled my mouth with rich, deep flavor.

The soft, chewy fresh noodles came piled with crown daisy greens and fried tofu, filling me up warmly and satisfyingly,

and it also comes with a crispy pork cutlet side as part of the set, so it felt like great value for money too. It's a gentle flavor that melts away your post-work exhaustion.

Is Chilseong Jemyeonso Suji worth a visit? Final verdict

  • Taste & quality: ★★★★★ (True to the name jemyeonso — noodle house — the chewiness of the noodles and the depth of the broth are top-notch!)
  • Value for money: ★★★★★ (In this era of high prices, getting this much of a set meal for the price is totally satisfying)
  • Would I return: 10000%

Next time I'm definitely coming back for the Chilseong maze udon and the charcoal white jjolmyeon! If you're near Suji or Seongbok Station in Yongin looking for a real noodle specialist or a clean, thoughtful meal, I confidently recommend Chilseong Jemyeonso Suji Main Branch! Be sure to give it a try!
